How To make Mexican Meat Loaf Roll
Ingredients
1 1/2
pound
ground beef
1/4
cup
old fashioned, or quick oats, uncooked
2
each
eggs, beaten
1
tablespoon
worcestershire sauce
1
teaspoon
pepper
8
oz
package of philadelpha cream cheese, softened
4
oz
can green chilis, chopped, drained
3/4
cup
salsa
Directions:
Combine meat, oats, eggs, worcestershire sauce and pepper; mix well. On wax paper, press meat mixture into 20x10 1/2-inch rectangle. Combine cream cheese and chilies; mix well. Spread cream cheese mixture over meat mixture to within 1 inch of outer edge. Roll, jelly roll fashion, starting at narrow end. Place in 12x8 inch baking dish. Bake at 350 degrees F, 40 minutes. Top with salsa; continue baking for 10 minutes. Let stand 10 minutes before serving.
Makes 6 to 8 servings.

3 Garlic cloves- minced
1/2 Cup Milk
2 Eggs
2 Slices of bread
1/2 Tsp Worcestershire Sauce
1 tsp Parsley Flakes
1/2 tsp Black pepper
2 TBSP Season All seasoned salt
1 TBSP Mc Cormick Garlic & Herb salt-free seasoning
1 tsp Red pepper Flakes
2 Tsp Paprika
1/3 Cup Barbecue Sauce (Sweet Baby Rays)
1 Tbsp Ketchup
1/2 tbsp Mustard
1 tsp Brown Sugar

This delicious meatloaf is always a hit in our house, old fashioned and busting with flavor, I watched my mom make this so many times and I have sweet memories that will stay in my heart forever...I have made this meatloaf hundreds of times and have found the perfect seasonings and amounts to make it delicious for my family, you can add or subtract anything to make it just right for you if you wish.

ANOLON advanced Nonstick Bakeware meatloaf/loaf pan (affiliate)
INGREDIENTS----------------------
2 Slices of wheat bread ( torn into pieces)
1/2 to 1 C. milk (till all bread is wet)
1 lb. 80/20 ground beef
1 lb. lean ground beef
1 celery rib (finely diced)
1/3 small/medium bell pepper (finely diced)
2 medium garlic cloves (minced)
1 medium onion (chopped fine)
1 tsp parsley flakes or fresh chopped
1 finely chopped celery rib
1/3 C. finely chopped green or other bell pepper
2 med/small minced garlic cloves
1/2 to 1 tsp All Around Seasoning (link posted)
Salt to your liking
pepper to your liking
2 Tbsp Worsetershire sauce
2 large eggs
TOPPING ON MEATLOAF---------------------
1 &1/2 C. Ketchup
1 tsp dry mustard OR yellow regular mustard
1/4 heaping Cup Brown Sugar
1 tsp Worcestershire sauce
1/2 tsp paprika (optional)
SIDE DISH--------------------
MASHED POTATOES -------------------------
3 Russet Potatoes
3/4 Stick Butter
Milk as needed for creamy texture
Salt as needed
Pepper as needed (optional)

It's fall! I love fall! Time to start making or rather REmaking those favorite comfort foods. Today's fall recipe is Mexican Meatloaf. I found this recipe on one of my favorite Lean and Green recipe sites, leanandgreenrecipes.net
Here is the recipe:
Lean & Green Mexican Meatloaf
Servings: 6
1 lean, 1/6 greens, 2.5 condiments
2.25 lbs. lean ground beef (I used 90/10)
1/2 c. egg beaters
1 t. chili powder
1/2 t. ground cumin
1/4 t. salt
2 cloves (or 2 t.) minced garlic
1/2 c. salsa
4 oz. diced green chilies
1 c. reduced fat Monterey Jack, shredded
1 c. reduced fat sharp cheddar, shredded
(I opted for 1 3/4 c. shredded reduced fat fiesta blend cheese)
1. Preheat the oven to 375*
2. Mix meat, egg beaters, and seasonings.
3. Place meat mixture on a sheet of parchment and pat into a rectangle. Evenly distribute the green chilies on the meat. Sprinkle over half of the cheese.
4. Using the paper, create a roll with the meat mixture. Seal up the ends.
5. Place the roll in a loaf pan and top with the 1/2 cup of salsa.
6. Place pan on baking sheet and bake for 50-55 minutes.
7. Remove from the oven, top with the remaining cheese, and return to the oven for another 10-15 minutes.
I find that most meatloaf recipes need a minimum of an hour. This one baked for 1 hour and 15 minutes total.
Allow to rest for 15-20 minutes before slicing.
Serve with your choice of 3 greens.

Calories: 270
Fat: 27.97 gr
Cholesterol: 346 mg.
Sodium: 772 mg.
Carbohydrates: 4.18 gr.
Protein: 47.76 gr.

1923 Mexican MeatLoaf Recipe - Old Cookbook Show
This recipe is from the Gebhardt's old cookbook from 1923. If you enjoy old cookbooks and real culinary history - you've found the right channel.
Ingredients:
2 pounds beef (ground)
1 pound pork (ground)
½ pound smoked ham (ground)
1 cup cracker crumbs
2 eggs
1 teaspoon salt
2 tablespoons minced onion
½ garlic button minced
1 tablespoon Gebhardt's Eagle Chili Powder
6 drops Tabasco Sauce
½ cup milk
Put all ingredients in a large bowl and mix thoroughly. Mold in loaf form about 3 inches deep, keeping the form even. Put in greased baker, add ½ cup boiling water, and cook in a quick oven from 40 - 50 minutes. If the baker is covered, it will not need basting; if open baste with boiling hot water twice during the cooking.
