How To make Sicilian Meat Roll
2 lb Ground Beef, lean
8 Boiled ham slices, thin
6 oz Mozeralla cheese, shredded
3 sl Mozeralla cheese
2 md Eggs, beaten
1/4 c Bread crumbs, soft
1/2 c Tomato juice
2 tb Parsley
1/2 ts Oregano, crushed dried
1/4 ts Salt
1/4 ts Pepper
1 md Garlic clove, minced
Combine eggs, crumbs (1/4c=1 slice approx), juice, parsley, oregano, salt, pepper and garlic. Add beef and mix well. On waxed paper or foil, pat meat into a 12in by 10in rectangle. Arrange ham slices atop meat leaving a small margin around the edges. Sprinkle shredded cheese over the ham. Starting from narrow end of the rectangle, roll up the meat using the paper (or foil) to lift. Seal edges and ends. Place roll seam side down on a 13x9x2in baking pan. Bake at 350F for one hour and fifteen minutes or until done. (Note: Center of roll will be pink due to colouration from ham slices). Cut three slices of mozeralla cheese diagonally and place them on top of the roll. Return to oven until cheese melts, approx 5 min. Also delicious served cold or in sandwich breads.

I'm no fan of meatloaf, but when I saw this recipe I had to try it. You won't be disappointed, either. Great flavor and a great complement to the pasta and marinara. This is meatloaf on a different level. Try it and let me know what you think!

Ham and Mozzarella Meatloaf Roll Ep.132
Ham and Mozzarella Meatloaf Roll Recipe:
In a large mixing bowl add:
- 2 Lbs. ( 900 kg ) lean ground beef
- 2 eggs
- 1 cup Italian bread crumbs
- 1/2 white onion finely diced
- 2 Tbs. ketchup
- 2 Tbs. mustard
- 1 Tbs. worcestershire sauce
- 2 tsp. granulated garlic powder
- 2 tsp. Italian seasoning
- 1 tsp. salt
- 1 tsp. pepper
- mix all well thoroughly
- lay 2 pieces of plastic wrap about 17 long on the counter overlapping by 1
- place meat on plastic wrap and form with hands in a rectangle about 1/2 thick
- place thin sliced deli ham on top leaving about 1-1/2 around edges of meatloaf exposed
- place strips of mozzarella cheese on top of ham
- roll up into a log shape using the plastic wrap to help shape it
- place on a cookie sheet with parchment paper
Cooking:
- place in preheated 375 F oven for 40 minutes
- remove and brush generously with marinara sauce
- place temperature probe into loaf
- return to 375 F oven for 10 - 20 minutes until temperature reaches 155 F, cover and rest for 10 minutes, the temperature should rise to 160 F
- slice and serve
You're going to love it! It's sooooooo moist and delicious! Makes fabulous leftover sandwiches the next day on toasted buns with extra cheese and marinara sauce!
