Chili Colorado Recipe (Old School Chili!)
Chili Colorado is an old school chili with big chunks of beef & a chili pepper sauce. A traditional Mexican recipe of pork or beef stewed low and slow in a rich red chili sauce, hence the name colorado, which means colored red, not from the state of Colorado.

THINGS YOU’LL NEED:
6 ancho chili peppers stemmed and seeded
6 guajillo peppers stemmed and seeded
2 pasilla peppers stemmed and seeded
3 chiles de arbol stemmed and seeded
1 tablespoon Mexican oregano
1 teaspoon cumin
Salt and pepper to taste
FOR THE CHILI
2 tablespoons olive oil
1 small onion chopped
2 jalapeno peppers chopped (optional – I like the extra heat and flavor)
4-5 cloves garlic chopped
2.5 pounds beef chuck roast cut into bite-sized chunks
¼ cup flour
Salt and pepper to taste
2 cups beef stock, chicken or vegetable stock are good, too
FOR SERVING: Crumbly white cheese, fresh herbs, spicy chili flakes – Rice and/or warmed tortillas, if desired

all purpose seasoning (or just salt, pepper, onion, garlic)
1-2 tsps beef bouillon powder
4-6 oz mexican beer
1 onion and bell pepper

2-3 tbsps cocao powder
1 tbsp cumin, smoked paprika, chili powder
1 pinch of cinnamon
28 oz crushed tomatoes
1 can tomato soup
1 can light and dark red kidney beans
2-3 tbsps brown sugar
2 tbsps honey
1 tbsp roasted garlic
Toppings:

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice

Chili con carne ( chili with meat) – one of the most known Mexican dishes around the world. This classic Mexican chili con carne is a great meal for family dinner or even for hosting friend and parties. This chili dish includes ground beef, peppers, tomatoes and red kidney beans.

Ingredients:
2 tablespoons Olive oil
3-4 Garlic cloves, crushed
1 Onion, chopped
1 Bell pepper, chopped
1 Red hot chili pepper, chopped
3 tablespoons Tomato paste
2 cans (800g) Crushed tomatoes
1½ pounds (675g) Ground beef
Salt to taste
Black pepper to taste
2 teaspoons Smoked paprika
2 teaspoons Chili powder
2 teaspoons Cumin
2 teaspoon Oregano
1½ cups (360ml) Beef stock/water
1 can (400g) Red kidney beans, drained
2-3 tablespoons Parsley/cilantro, chopped
Directions:
1. In a large pan or Dutch oven heat olive oil over medium heat. Add chopped onion and sauté for 4-5 minutes, add diced bell pepper, chili pepper and cook for 3-4 minutes, add crushed garlic and cook for 1-2 minutes more.
2. Turn heat to high, add ground beef and cook until no longer pink. Add spices, tomato paste and cook, stirring for 2 minutes.
3. Add crushed tomatoes, beef stock, beans and bring to a boil. Reduce the heat to low and simmer over low heat for 1 hour, until thickens slightly.
4. Turn the heat off, add chopped herbs and stir.
5. Serve

Chili Colorado is probably one of the best chilies I've ever tasted! Facts!! Now I'm sure someone will say that their chili is the best; not trying to get into an argument here, just saying that based on the many types of chilies there are in the world, Chili Colorado is the best! There are heated discussions on whether or not beans belong in chili, not swayed in either direction. However, if you're talking about the MOST FLAVORFUL CHILI, then that title belongs to Chili Colorado!! [Steps down from soapbox] At first glance, you would think that Chili Colorado originated in the actual state of Colorado, but nope! Colorado means red in Spanish and refers to the rich red color produced from several dried chilies. The blend of chilies is according to your preference, but Guajillo, Ancho, Pasilla, and New Mexico chilies are the most popular. You can make Chili Colorado with beef, pork, or even chicken. 3 cups hot beef stock
4 cloves garlic
2 tsp ground cumin
