How To make Millet Loaf
1 1/2 c Millet
3 3/4 c Water
2 ts Sea salt
1 1/2 c Peeled, finely diced carrots
1 c Finely diced celery
1 c Finely diced onions
1 Garlic clove; minced
2 tb Sesame oil
1 1/2 ts Dill weed
1 ts Dried thyme
1 c Pistachio nuts (optional)
-OR- roasted sunflower seeds 3 tb Unbleached flour
3 tb Gluten flour
You can serve this versatile loaf for lunch or as an appetizer. Place slices on a bed of Bibb lettuce with vegetable garnishes and a light, creamy salad dressing. ************************************************************ Rinse the millet and put it in a medium saucepan with the water and 1/2 teaspoon sea salt. Cook the millet, covered, over medium heat for about 30 minutes or until soft; the millet should absorb all of the water. (If the grains are too moist, the loaf will not bind properly.) Saute the carrots, celery, onions, and garlic in oil for 6 minutes, or until the onions are translucent. Add the seasonings, including the remaining 1 1/2 teaspoons of salt. Mix the cooked millet and the vegetables together, along with the nuts or seeds, if you wish. Mix the two flours together and add them to the millet mixture, blending it well so the loaf will hold together. Lightly oil and flour a large loaf pan. Press the millet mixture into the pan and bake in a preheated oven at 400 degrees F for about one hour. (If the millet mixture is warm when you put it in the pan, reduce the baking time to about 45 minutes.) Allow the loaf to cool for 10 minutes, then carefully remove it from the pan. This bread can be sliced and enjoyed on its own, used in sandwiches and you can also freeze it. This is the fluffiest and tastiest gluten-free bread I have ever tasted and believe me I have tried many! Even my boyfriend who isn’t gluten-free loves this bread and always asks me to bake a new loaf!
Gluten-free breads in the grocery stores are quite expensive and often a bit dry! This bread is every coeliac’s and gluten intolerant’s dream! It’s so delicious and not dry at all and actually quite easy to make????
In this recipe I used all purpose gluten-free flour mix, which is basically a mix of rice flour, corn starch and potato flour☺️ Pretty much any kind of all purpose gluten-free flour mix should work well in this! If your flour mix already contains psyllium husk, you don’t need to add any psyllium to the dough. Same thing if you are using regular non gluten-free flour, no need to add psyllium, it’s only needed for gluten-free baking. The loaf pan I used was: 12 x 20 cm / 5 x 8 inch
Ingredients:
1 1/2 cups warm water (360 ml)
4 1/2 teaspoons of dry yeast (11 g)
1 tablespoon psyllium husk powder (if your flours don’t already contain it)
3 tablespoons maple syrup or honey
3 tablespoons olive oil
2 teaspoons salt
2 - 2 1/2 cups all purpose gluten-free flour mix (480 - 600 ml)
2 egg whites

Millet Bread - Gluten free 無麩質小米包
Millet Bread - Gluten Free
Ingredients:
350g / 1 1/2 cup Ground Millet Flour
35g / 1/4 cup Ground Black Sesame
16g / 1.08 tbsps. Ground Golden Flaxseed
2 tsps. Baking Powder
1/2 tsp Baking Soda
3/4 tsp Hilmalaya Salt
625 ml Plain water
1 tbsp Rice / Apple cider vinegar
25g / 2.72 tbsps. Whole psyllium husks
Cup measurement = 240ml
Bake at pre-heat oven at 160C for 90mins.
Note: I had made this bread before with readymade millet flour, the bread turned out with a bit bitter aftertaste.
So this time I have chosen newly packed organic millet & grounded millet flour of my own.
This gluten free bread is very tasty & flavorful especially with its Crust. The texture of this bread is dense, soft & moist. I think it is tastier than wheat flour bread.
You may toast or make good sandwich with this nutritious bread too.

這種無麩質麵包非常美味可口,尤其是它的地殼。這種麵包的質地緻密、柔軟、濕潤。我覺得它比小麥麵粉面包好吃。

Hello my gluten free sourdough and alternative grain curious friends! This recipe for freshly milled, whole grain millet sourdough bread is my best gluten free sourdough recipe to date! I love its simplicity, it takes no more than five minutes to whip up, then after that it's a matter of fermenting the dough over a few hours time, then baking it in a nice, hot oven. I hope you enjoy this recipe as much as we have been. It's great for all kinds of whole grain sourdough bakers! Millet has a lovely flavour, it's one of my favourite grains.
