Today in our village, we cook three big fish fry recipe. We call this fish as vanjaram in our village. We cutting the fish slice and marinate the slices with traditional hand-ground masala. Then we fried it in traditionally made gingelly oil.
Finally, we taste this fish fry recipe with our favorite mutton curry.

Banana Leaves are excellent for our immune system, and the combination of Caribbean flavours and natural and fresh ingredients will make you want to prepare your baked fish this way. I recommend using Pargo, Rubia, or Snapper. Only the fillet can be whole.

Ingredients.
2 medium fish, clean and cut diagonally 900g
4 garlic cloves, minced
4 tbsp white wine
2 tablespoons of annatto achiote
1 tbsp salt
1 tbsp pepper
2 bay leaves
2 tbsp olive oil
1 tsp oregano powder
6 tsp coconut milk
banana leaves. Passed through fire and cleaned. watch the video
60g onion julienned
60g bell pepper julienned
cherry tomatoes
slices of a lemon
Preparation.
Add in a bowl garlic, bay leaf, olive oil, salt, pepper, wine, coconut milk, bija (achiote), and oregano, and mix well. This marinade impregnates the fish well inside and out.
Preheat your oven to 180g. c
In a baking pan, put aluminum, then the banana leaves.
Now add onion and put the fish on top. And top with the remaining marinade.
Add the peppers, more onion, the lemon slices.
In the middle place are the cherry tomatoes.
Cover with more banana leaves and then aluminum. It should be well sealed.
Put in the oven and raise the temperature to 200g. c. for 20 to 25 minutes
Carefully uncover and enjoy this delicacy.
