How To make Miniature Fruitcake Jewels
FRUITCAKES:
1 c All-purpose flour
1/3 c BUTTER FLAVOR CRISCO
1/3 c Granulated sugar
1/4 c Orange juice
1/2 t Baking powder
2 Eggs
1 c Diced mixed candied fruit
1/2 c Quartered red candied
-cherries 1/2 c Quartered green candied
-cherries 1 c Golden raisins
1/2 c Diced dates
1/2 c Coarsely chopped pecans
GLAZE:
1/3 c Confectioners' sugar
2 t Brandy or orange juice
1. Preheat oven to 350'F. Place 22 (2 1/2") foil baking cups in muffin pan
cups. 2. FOR FRUITCAKES, combine flour, Butter Flavor Crisco, granulated sugar,
orange juice, baking powder and eggs in large bowl. Beat at low speed of electric mixer until blended. Increase speed to medium. Beat until light and fluffy. Stir in mixed fruit, red and green cherries, raisins, dates and pecans. Spoon into prepared muffin cups, filling about 3/4 full. 3. Bake at 350'F. for 25-27 minutes or until toothpick inserted into
center comes out clean. Leave fruitcakes in muffin pans. 4. FOR GLAZE, combine confectioners' sugar and brandy in small bowl. Stir
until smooth. Brush lightly over tops of warm baked fruitcakes. Cool in pans. Makes 22 miniature fruitcakes. NOTE: Can also be made in 2" baking cups. Place 36 foil baking cups in muffin pan cups. Prepare batter and fill cups as directed in step 2. Bakes at 350'F. for 18-20 minutes or until toothpick inserted into center comes out clean. Makes 36 fruitcakes.

POUR IN A SAUCE PAN
1 TSP AGAR POWDER
1 TSP VANILLA EXTRACT
COOK UNTIL THICKEN
PLACE 8-10 PIECES DIGESTIVE BISCUITS
POUR THE MIXTURE
COOL DOWN FOR 10 MIN.
¼ CUP RED GRAPES
¼ CUP BLACK GRAPES
¼ CUP GREEN GRAPES
¼ CUP STRAWBERRY
¼ CUP ORANGE
1 & ½ CUP WATER
¼ CUP SUGAR
1 TSP AGAR POWDER
COOK UNTIL BOIL
COOL DOWN FOR 5 MIN.
PLACE THE FRUITS
POUR THE JELLY MIXTURE
COOL-DOWN & KEEP IN FRIDGE FOR 1 - 2 HOURS

분 베이크입니다.
오늘은 세상에 하나뿐인 신기하고 아름다운 과일 젤리 케이크를 만들어 봤어요.
어찌나 영롱한지...
마치 모든 소원을 들어 줄 것 같은 신비한 유리구슬 같았어요.
그 아름다움이 사진이나 영상으로 담기가 참 어렵네요.
모든 분들께 실제로 보여드리고픈 마음입니다..
이번에 만든 과일 젤리 치즈케이크는 4가지 맛으로 된 치즈케이크 볼과 신선한 과일이 어우러져 있어요.
저는 집에 블루베리, 라즈베리, 키위, 망고가 있어서 사용했는데요.
가지고 있는 퓨레를 자유롭게 이용하시면 맛있는 과일 치즈 케이크를 만들 수 있어요.
만들고 남은 치즈케이크 볼은 아이스크림처럼 먹었는데요.
그 자체만으로도 참 맛있었어요.
구 모양의 실리콘 몰드가 있다면 만들기 수월하겠지만.. 전 두 개밖에 가지고 있지 않아서 반구형 몰드로 만들어 봤어요.

설탕 35g ( 3Tbsp )
레몬즙 1/2 Tbsp
가루 젤라틴 5g ( 1 tsp+1/2tsp )
물 25g (1Tbsp +2tsp )
생크림 135g (60% 휘핑함) ( 1/2컵 + 1Tbsp - 휘핑하기 전 )
블루베리 퓨레 35g (2Tbsp+1tsp)
라즈베리 퓨레 35g (2Tbsp+1tsp)
키위 퓨레 35g (2Tbsp+1tsp)
망고 퓨레 35g (2Tbsp+1tsp)
● 투명 레몬 젤리
가루 젤라틴 48g ( 6Tbsp )
물 240g (1컵)
뜨거운 물 480g ( 2 컵 + 1tsp )
설탕 190g ( 1컵 )
레몬즙 30g ( 2 Tbsp )

Hi guys!! This is my last cake for the year 2020.It is a soft sponge cake filled with cream cheese filling and fresh fruits, covered with with white chocolate ganache and more fresh delicious fruits.I added a layer of coconut flavored gelatin to give it a cool effect.

If you want to know how to secure the bottom of your pan with Plastic wrap, Please watch this video :
Gelatin water recipe:( Recipe in the video is for a bit hard gelatin version,This is if u want it soft,U can use either one based on your preference)
Mix 120 g of gelatin with 1 1/2 cups -of coconut water or water and let it sit for 15 minutes.
Boil 200g sugar with 600 ml water
Add 2 teaspoon of coconut extract or 2 tablespoon of lemon juice
pour Hot water over the soaked gelatin and stir very well,
Let the gelatin mixture come to the room temperature before pouring on the cake,Surely you will not need all of it but it's better to have extra in hand.
