Gluten Free Sugar Cookie Bread Recipe - So Delicious!
Thanks for tuning into Cookmas 2021 where every day in December I will be posting a cooking recipe! I will be sharing a variety of delicious recipes from easy crockpot meals, sheet pan meals, to dessert and drink recipes.
Today’s recipe is: Gluten Free Sugar Cookie Bread
Bread Ingredients:
• 1/2 cup (1 stick) unsalted butter, melted
• 1 cup granulated sugar
• 1 egg
• 1 teaspoon almond extract
• 1/2 teaspoon vanilla extract
• 1/2 cup milk
• 1 1/3 cup 1:1 gluten-free flour *
• 1 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1/4 teaspoon salt
• 3 teaspoons (red & green) sprinkles
Glaze Ingredients:
• 1/2 cup powdered sugar
• 1 tablespoon milk
• more sprinkles for topping
Directions:
1. Preheat oven to 350 degrees
2. In a large bowl mix together butter and sugar, then add in egg, almond and vanilla extracts. Lastly mix in milk until all wet ingredients fully combined
3. In a separate bowl mix together flour, baking powder, baking soda and salt
4. Add dry ingredients to wet ingredients and mix just until combined
5. Fold in the sprinkles. Don’t over-mix so the sprinkles don’t bleed
6. Transfer batter to a parchment-lined + greased loaf pan and bake for 45-50 minutes, or until a toothpick comes out clean. Be sure not to over-bake!
7. Let cool for 20 minutes in pan, then use a butter knife along edges to remove and transfer to a cooling rack. Let cool completely before topping with glaze
8. To make the glaze, whisk powdered sugar and milk until a smooth consistency, adding more milk if needed
9. Pour/spread glaze over the bread, then top with more sprinkles

Easy Thumbprint Jewel Apricot Walnut Cookies
These are one of my favorite cookies to bake , inspired by McCall's Cookie Collection these cookies are beautiful looking and so delicious! I doubled their recipe and added 1/4 cup of confectioners sugar, which I feel gives the cookie a more melt in your mouth texture. I find mixing everything in the processor incorporates all the ingredients better than mixing the batter by hand , just don't over process . This recipe will yield approximately 24 Yummy cookies .
