2 c Chopped onions 1 Fresh garlic clove; peel/fin 4 c Water 1/2 c Firmly packed brown sugar 1/2 c Molasses 2 tb Apple cider vinegar 4 Bay leaves 1 ts Dry mustard 1/4 ts Pepper 1/4 ts Nutmeg 1/4 ts Ground cinnamon 1/8 ts Allspice 32 oz Canned tomato sauce 1 lb Navy beans; dried uncooked This is a wonderful recipe that I got from a cookbook called Lean Luscious & meatless. It takes a little bit of time to prepare but is well worth the effort. It is the best baked beans I have ever had. You can substitute baby limas for the navy beans. I have changed a few things from the original recipe to suit my own taste so feel free to add any of your favorite seasonings. Rinse & drain beans. Place in a large bowl with remaining ingredients except tomato sauce. Mix well cover & place in the refigerator for 24 hours. TO COOK: Transfer bean mixture to a large oven proof pot. Add tomato sauce. Bring to a boil over medium heat. Reduce heat to low, cover & simmer 45 min stirring occassionally. Preheat oven to 300 degrees. Place pot in oven. bake 4 hours covered. Check beans every half hour or so adding water and stirring as needed. British Baked Beans are just like store bought Heinz, and as close in flavor as you will find, but better because they’re homemade and haven’t been sitting in a can. Similar to American-style, but meat-free and without the smoky flavor, just like mum used to serve. Navy, great northern (or haricot) beans are cooked in tomato sauce for a taste of a British classic.

Per Usual another far from perfect video, I think by 2020 I will have this cooking thing down packed. I swear I practiced thid recipe 3 times and each time something was off. Lawd! Help each other out because Im still not sure if i needed to boil the beans if using a slow cooker( I borrowed this one and was using a rehular pot before and beans never got tender even after 6 hours on low) Here is MY recipe: 2 cups of red beans. Soaked overnight and boiled(45 mins) and drained. 1 cup and 1/4 celery 1 cup onion 1/3 cup garlic 15 oz can tomato sauce 2/3 cup agave 1/2 cup apple cider vinegar 4 tbsp mustard 2 tbsp paprika 1 tbsp Cumin Salt and Pepper to Taste
PS: yes are right, these were never baked, but who calls them simmer beans????????
You have to make these for your next BBQ or anytime, really! They are so simple to put together, high in protein, and budget friendly, literally pennies to make and a nutrition power house. Vegan, Oil free, gluten free and everyone will love them!! Win Win!
Vegan Baked Beans
1 lb navy beans, soaked overnight 1 small onion, chopped 1/4 cup ketchup or tomato sauce 1/3 cup blackstrap molasses or brown sugar 1/4 BBQ sauce 1 tsp smoked paprika Salt and pepper to taste 2 1/2 cups water
Add all ingredients to your slow cooker and set to cook for 8 hours on low or 4-6 hours on high.
