First off all, let me wish you all a Happy Easter. It will be a different Easter to that of the ones you previously had but as long as you are still surrounded by your loved ones is what matters.
Deliciously moist date cake. The date is very sweet so you can take off 100g if you do not like your cake too sweet. Can be kept for a week, if it lasts that long ;)
500g dates (if too sweet take off 100g of dates)
1/2 tsp bicarb of soda
1 cup of water
180-200g butter (room temperature)
2/3 cups caster sugar (or grind the normal sugar and take 2/3 cup)
3 eggs
1 1/2 self raising flour (if no self raising flour add a level tsp of baking powder to a cup of plain/maida flour and mix well)
1/4 cup plain flour (maida flour)
Date Nut Cake
This recipe came via a community cookbook that was gifted to me from a church in the Little Switzerland of Ohio, otherwise known as Sugarcreek, Ohio. I'm not sure when the cookbook was published - perhaps in the 1970's or 1980's - but this seemed like a good, old-fashioned recipe, so I thought I'd try it. It was a wonderful cake!
1/2 lb. chopped pitted dates
1 tsp. baking soda
1/2 cup shortening (I used butter)
1 egg
1 cup of chopped nuts (I used walnuts)
1 cup of boiling water
1 cup sugar
1/2 tsp. salt
1 2/3 cup flour
1 tsp. vanilla
Preheat oven to 325 degrees.
Put chopped dates in a small bowl and sprinkle baking soda over dates. Cover with 1 cup boiling water and allow to cool to room temperature.
Cream shortening and sugar. Add egg and salt and beat well.
Add the date mixture (including liquid) alternately with the flour to the creamed mixture, scraping the bowl as needed. Add nuts and vanilla and stir in until combined.
Bake in a greased and floured 8x12 pan (I used an 8x8 pan) for 50 minutes at 325 degrees, or until cake tests done. Remove cake from oven and allow to cool completely on wire rack. Once cake is cooled, spread topping on cake.
Topping:
1/2 lb. chopped pitted dates
2 TBSP corn starch
1 cup sugar (I would cut this down to 1/2 cup unless you want a very sweet topping)
1 cup water
Combine all ingredients in sauce pan and slowly bring to a boil stirring constantly until thickened. Remove from heat and allow to cool completely before putting on cake.
Date Loaf Video Recipe cheekyricho
A real old fashioned family favourite, cheekyrichos Date Loaf in a Nut Tin. Best eaten warm with cold butter spread onto it. Nostalgia in a roll. We hope you give it a try.
INGREDIENTS:
150 grams water
120 grams chopped pitted dates
1/2 teaspoon bicarb soda
75 grams brown sugar
160 grams self raising flour
1 egg
40 grams nuts
1 teaspoon cinnamon
30 mm piece of vanilla bean
50 grams butter
METHOD:
Boil water, brown sugar, butter & chopped vanilla bean until sugar is dissolved, add dates and boil abut 5 minutes until syrupy & pulpy. Remove from heat. Grease Nut Loaf Tin well and set aside. To the date mixture add bicarb soda, flour,cinnamon & nuts mix until combined and pour into the prepared tin. Place the lid on and bake 45 minutes at 170 degrees celsius. Allow to cool slightly before removing ends of tin and turning out onto a wire rack. Slice while still warm and serve with cold butter.

This Christmas Date Walnut Cake without eggs is so moist and fluffy that it is as good or even better than those with eggs. Try this Eggless Cake recipe which is so simple that it can easily be made at home by even those who are baking a cake for the very first time. Given below are the step by step instructions on how to make Eggless Date Walnut Cake.
Ingredients:
2 cups Maida (All purpose Flour)
1/4 cup Walnuts
1 cup Sugar
11/2 tsp Baking Soda
1 tbsp Vanilla essence
1 cup deseeded & chopped Dates
11/2 cup Milk
1 cup Oil
1 cup grated Carrots
1 tsp mixed Spices (equal quantities of Cinnamon/Cloves/Nutmeg)
Method:
-- In a blender, combine Sugar and Milk, till the Sugar dissolves completely.
-- Add Oil, mix well and keep aside.
-- In a bowl combine together Flour, Baking Soda and Spice powder.
-- Pour the wet ingredients into this bowl and mix well.
-- Add Vanilla essence, Dates, Walnuts and grated Carrots and mix well.
-- Pour this batter into a prepared Cake tin.
-- Bake at 180 degrees C for 45-50 minutes.
-- Insert a skewer to check whether Cake is done.
-- Cool, cut and serve.
