How To make Monkfish with Almonds, Sweet Red Peppers & Sa
2 lb Monkfish, in large whole
-filets, skin and membranes -removed 2 tb Olive oil
3 lg Garlic cloves, minced
3 lg Red bell peppers, cored,
-seeded, cut into strips -lengthwise 3/4 c Whole almonds, toasted
1/2 ts Saffron threads
1/2 c Dry white wine
1/2 c Fish stock
1/2 ts Salt
1/2 ts White pepper, or to taste
1 Ounce sliced almonds,
-toasted, for garnish
Preheat the oven to 350F. Bake the fish in a buttered baking pan for 15 minutes. Let cool. Cut into medallions and set aside. Reserve the baking juice. Heat the oil in a large skillet, add the garlic and peppers and saute over low heat for 20 minutes, stirring occasionally. Grind whole almonds finely in a food processor and add to the skillet with the saffron, wine, stock, reserved fish juices, salt and pepper; cook over medium heat for 5 minutes. Transfer to a blender or food processor and puree. Return the sauce to the skillet, add the fish medallions, and heat through. Serve immediately, with sliced almonds sprinkled on top. Serves 6. Sweet And Sour Fish | Sweet And Sour Fish Restaurant Style | Sweet And Sour Fish Recipe | Chinese Sweet And Sour Fish
Ingredients for Sweet and Sour Fish:
Boneless Fish - 300 gms. (Basa, Cod, Haddock,Sole or Catfish)
Marinate with:
- Salt- 1/2 tsp
- Pepper Powder - 1/2 tsp
- Lemon juice- 1 tsp
Batter/mix to be added to marinated fish cubes:
- All purpose flour (Maida) - 1 tbsp
- Corn Flour- 2 tbsp
- Pepper powder- 1/4 tsp
- Egg white- 1
- Salt- a pinch
Sweet & Sour Sauce:
- Tomato Ketchup- 4 tbsp
- Sugar- 3 tbsp
- White Vinegar- 3 tbsp
- Dark Soy Sauce- 3/4 tsp
Other Ingredients:
- Green Bell peppers/capsicum, cubed- 1 cup (around 70 gms)
- Red Bell peppers/capsicum, cubed- 1 cup ( around 70 gms)
- Onion Petals- 1 small (50 gms)
- Crushed pepper- 1 tsp (coarse granules)
- Oil- 1 tbsp oil + oil for deep frying the chicken
Preparation:
- Wash and cut the boneless fish fillets into bite sized pieces.
- Marinate the fish pieces with the items mentioned. Mix well and set aside for 15 mins.
- Add the items for the batter to the marinated fish pieces and mix well.
Process:
- Heat oil in a skillet or wok for deep frying.
- Fry the fish in hot oil on medium heat till light brown. This should take around 3-4 mins. Don’t overcrowd the pan & fry in 2 batches.
- Now take a ok or Kadai and add 1 tbsp oil.
- Keep it on high heat and add the onion petals. Stir fry on high heat for 1 minute & then add the cubed peppers.
- Continue to stir fry on high heat for 1 minute , move everything on one side and then pour the sweet & sour sauce. Mix and continue to cook on high heat for another minute till the sauce is thick.
- Now add the fried fish pieces, give a mix and continue to stir fry to coat the fish pieces well with the sauce. This should take around 2 mins.
- Add the crushed pepper and stir for another 30 secs.
- Serve as an appetiser of with noodles/fried rice.

Really good Fish Cakes
You'll find faster fish cake recipes out there. But these ones are particularly good! The trick is to keep potato chunks and big flakes of fish rather than letting it turn into mush. And the garlic-chilli-green onion-thyme sautéed in butter that's mixed through the potato is just divine!

Ingredients for Fish Curry:
- Boneless fish fillets - 500 gms (Basa, Cod, Haddock,Sole or Catfish)
For the Tempering:
- Mustard Seeds- 1/2 tsp
- Curry Leaves- 10-15 leaves
- Green Chillies, chopped- 2-3 nos.
Onion Masala paste:
- Onion, cubed- 2 medium (150 gms.)
- Ginger chopped- 1” piece
- Garlic cloves- 6
- Cumin Seeds- 1 tsp
Spice Powders:
- Turmeric Powder- 1/2 tsp
- Red Chilli Powder- 2 tsp
Other Ingredients:
- Tomato purée or paste- 3 tbsp (readymade)
- Coconut Milk- 1 cup (225 ml)
- White Vinegar- 2 tsp
- Refined Oil- 3 tbsp
- Salt- 1 tsp
Preparation:
- Make a paste of the cubed onions, peeled and chopped ginger, peeled garlic and cumin seeds. Remove and set aside.
- Chop the green chillies and wash & take out the curry leaves.
- For the coconut milk you can use readymade coconut milk or make fresh coconut milk from fresh coconut at home.
- For the fish, take boneless fish fillets and cut them into thick slices.
Process:
- Heat oil in a pan and add the mustard seeds. Once it splutters, add the curry leaves and the chopped green chillies.
- Give a stir and then add the Onion paste. Give a mix and continue to fry on medium heat for 7-8 mins till light brown in color.
- Now add the tomato purée, give a mix and fry on low heat for 2 mins.
- Now add the Turmeric, Red Chilli Powder and salt. Give a mix and fry on medium heat for 2-3 mins after adding 3 tbsp water till oil separates.
- Add the coconut milk and 200 ml water, give a mix and cover & cook on low heat for 5 mins till oil separates.
- Now add the boneless fish pieces and give a mix. Cover & cook on low heat for 10 mins.
- Add the white vinegar, shake the pan to give a mix. Simmer on low heat for 2 mins.
- Switch off heat, cover the lid and let it rest for 15-30 mins before serving.
- Serve it with rice.

Serves: 2-4
Ingredients:
1 tbsp olive oil
2 red onions sliced
½ jar of wood roast peppers
1 red chilli sliced
2 cloves of garlic sliced
½ tsp cumin powder
1 tin of tomatoes
1 punnet of cherry tomatoes
4 eggs
Pinch of salt and freshly ground black pepper
Method:
- Heat the oil in an oven proof frying pan or dish on the stove then begin to fry the red onions, chilli, garlic and cumin together, once soft add the tinned tomatoes, peppers and cherry tomatoes and bring up to a simmer.
- Once the tomatoes have broken down stir in the coriander stalks and season with salt.
- Then crack on the four eggs.
- Now pop into a pre heated oven 180 degrees celsius for 10 to 12 minutes or until the eggs are just set.
- To serve sprinkle over the chopped coriander leaves.
- Serve with some crusty bread.

1 Fish Scaled and Gutted( I used a Croaker)
½ Thumpsize Ginger
4 Garlic Cloves
¼ Onion
2 Mini Peppers
1 Green Onion
2 4 Cilantro stems
1 tsp Chicken Knorr Seasoning or Seasoning Powder or Bouillon
½ tsp Blackpepper
¼ tsp Whitepepper
1 tsp Chilli Flakes
1 tsp Smoked Paprika
1 tsp Thyme
¼ Cup of Cooking oil
Grilled (Broil Oven Option) Covered at 400F for 15 Mins depending how big your fish is. then Open the foil and Grill for another 5 mins same 400F so it has a Char look and Crispy Outside.
