Bonjour tout le monde et bienvenue ????aujourd'hui je vous suggère la recette du Couscous aux légumes, Moroccan Couscous , parmi les plats classiques traditionnels de la Cuisine Marocaine. Un bon plat incontournable du vendredi ! Préparation facile et simple, il vous suffit de bons légumes et un bon Couscous à la semoule de blé. J'ai utilisée la semoule complète, saine et riche en fibres, vous pouvez également le préparer avec la semoule d'orge ou un mélange des deux.

Les ingrédients
Pour le BOUILLON
Poulet ou Viande
1Oignon & Poivron vert
2 Carottes & Navets & Courgettes & Tomates
200g Citrouille
Coriandre & Persil
Piment fort
Huile pour cuisson
Sel Poivre Gingembre Curcuma
2,5 litres d'eau chaude
Pour le COUSCOUS
500g Semoule moyen de blé complèt
800ml d'eau
1cà thé de Sel
1càs d'huile de tournesol
3 càs d'huile d'olive d'argan ou beurre rance (Smen)

200g Pumpkin
Coriander & Parsley
Hot pepper
Cooking oil
Salt / Pepper / Ginger / Turmeric
2.5 liters of hot water
For the COUSCOUS
500g Medium whole wheat semolina
800ml of water
1 tsp salt
1 tbsp sunflower oil
3 tbsp argan or olive oil or Ghee

2 zanahorias y nabos y calabacín y tomates
200 g de calabaza
Cilantro y Perejil
Guindilla
Aceite de cocina

2,5 litros de agua caliente
Para los COUSCOUS
500 g de sémola de trigo integral mediana
800 ml de agua
1 cucharadita de sal
1 cucharada de aceite de girasol
3 cucharadas de argán o aceite de oliva o ghee

Moroccan Berkoukech Recipe! M’Hamsa, Aïche, Pearl Couscous Recipe! #recipe #moroccanfood
Berkoukech With Meat: A Delicious Dish of Stewed Meat, Spices and Large Grain Semolina. This dish is popular across North Africa. In Morocco you’ll find versions with Ras El Hanout, in Algeria versions that are packed with vegetables and in Tunisia a version packed with firey harissa. This dish is commonly made in the winter months but is also made in Morocco after giving birth.
Here’s a version I created at home after eating a delicious Berkoukech dish at @ledouar.marrakech
Ingredients:
4T olive oil
1 large onion, grated
2 tomatoes, grated
1t turmeric
1.25t paprika
1.25t ground ginger
.75t black pepper
1/2t ras al hanout
Salt, to taste
3T finely chopped cilantro
1T tomato paste
300g Berkoukech or Petits Plombs
1 chili pepper (optional)
500g lamb or beef stew meat, with bones
In a large pot, heat the olive oil over medium heat. Add the grated onion, beef, spices and chopped cilantro. Let cook for a few minutes to lock in the flavors. Add grated tomatoes and tomato paste and cook for a few more minutes. Season generously with salt.
Add 1.7L of of water, bring to a boil, reduce to simmer, add chili pepper (if using) and cook over medium low heat for about an hour until the meat is tender and broth is flavorful.
Add an additional .5L of water (if needed) and bring to boil. Add berkoukech and cook for another 20 minutes until berkoukech is plump and tender.
Garnish with chopped cilantro and serve immediately.

Moroccan inspired Chickpea Stew Recipe | EASY ONE POT MEAL IDEA!
LEARN HOW TO MAKE AN EASY MOROCCAN CHICKPEA STEW RECIPE
LAY HO MA!! I absolutely love one pot recipes. Not only is this stew easy to make, it's incredibly delicious! Join me in this episode and learn how to make an easy vegan moroccan chickpea stew. Let's begin.
Ingredients:
3 red onions
5 pieces garlic
1 large sweet potato
3 tbsp olive oil
2 tsp cumin seeds
1 tsp chili powder
1 generous tbsp sweet paprika
1 tbsp cinnamon
few sprigs fresh thyme
2 cans 400ml chickpeas
1 800ml can San Marzano whole tomatoes
1.6L water
3 tsp pink salt
2 bunches of collard greens
1/4 cup sweet raisins
few sprigs fresh parsley
Directions:
1. Dice the onions, finely chop the garlic, and peel and cube the sweet potato
2. Heat up a stock pot on medium heat. Add the olive oil
3. Add in the onions and garlic. Then, add in the cumin seeds, chili powder, paprika, and cinnamon
4. Give the pot a good stir and add the thyme
5. Add in the sweet potato and chickpeas. Stir well
6. Add in the tomatoes and crush to release it's juices
7. Pour in two tomato cans worth of water
8. Add the pink salt and stir well. Turn up the heat to bring to a boil, then simmer on medium for 15min
9. Remove the leaves from the collard greens and give it a rough chop
10. Add the greens into the stew along with the dried raisins
11. Transfer 3 cups of stew into a blender and blend on medium high
12. Pour the blend back into the stew and give it a good stir
13. Plate and garnish with freshly chopped parsley

this is my version of lamb-couscous tagine, the dish traditionally uses lots of spices but here i´m trying to reduce some spices and making more meat tander and delicious with easy way here are the ingredients !
01kg Boneless lamb
350ml lamb borth
150g dried apricots
200g cous-cous
400g white onion chopped
3tbs extra-virgin olive oil
1tsp garlic paste
1tsp ginger paste
1tbs tomato paste
02 star anise
1tsp ground cumin
1tsp ground coriander
1tbs curry powder
1tsp paprika powder
pinch of ground cloves
pinch of saffron
salt and pepper--as for taste
fresh chopped cilantro + garniches and some roasted nuts
for lamb stock : water,rosemarry,carrot,onion and bay leaves..
for cous-cous : cous-cous,saffron, butter,salt, pepper...
