How To make Never Fail Batter
1 c All-purpose flour
1 ts Baking powder
1/2 c Cornstarch
1 c Water
2 ts Salt
1 ts Sugar
1 ts Oil
Mix all of the ingredients together and blend until there are no lumps. Preheat the oil in your deep fat fryer to the proper temperature for the food you are cooking. Dry the fish or the vegetables with a paper towel and dip into the batter. Place in the hot oil one piece at a time. Try to keep the pieces from colliding until the batter has had a chance to set (which it does almost instantly). Cook until the batter has turned a golden brown, remove to a paper towel to drain and serve at once. This is very good to use for zucchini, broccoli, peppers, green beans, onion rings and any other firm vegetable.

Unsalted butter (room temp.) 180g
Sugar 160g
Eggs (room temp.) 160g
Cake flour 180g
Baking powder 4.5 (1tsp + 1/8tsp)
Heavy cream 60g
Earl Grey tea 6g (3 tea bags)
Bake at 350F for about 20min
(Time can differ depends on your oven and the amount of the cake mixture)
Orelys glaze
Valrhona Orelys 35% chocolate 75g
Canola oil 10g
Orelys Ganache
Valrhona Orelys 35% chocolate 100g
Heavy cream 55g (Hot)
Unsalted butter 9g (room temp.)
*If you don’t have Orelys chocolate, you can use milk chocolate instead.

Cook in a hot oven at 220oC/430oF until they’re golden brown and sound hollow when you knock on them. This might take around 15-20mins, sometimes a little longer, depending on how big you make your scones.
