4 c Chow mein noodles 3 c Mini marshmallows 3 tb Butter Small jelly beans Pam spray-on cooking oil 1. Grease cookie sheet. 2. Pour noodles in bowl. 3. Melt marshmallows and butter in saucepan over med. heat, stir until smooth. 4. Pour marshamallow mixture over noodles, stir until well coated. 5. Rub butter on hands and form noodle mixture into five round balls. 6. Place on cookie sheet. 7. With back of spoon, press each ball to make a hollow nest. 8. Let nests firm, then fill each with jelly beans. Suggested age level:6 thru adult but I don't see why a younger child couldn't help with the non cooking part.
For the Tikkis 1 cup Potatoes (boiled & mashed) ½ cup Green Peas ¼ cup Capsicum (chopped) 2 tsp Garlic (chopped) 2 tsp Ginger (chopped) 2 Green Chillies (chopped) 1 tsp Chilli powder ½ tsp Turmeric Powder 2 tsp Chopped Coriander 1 cup Paneer (grated) Salt to taste
For the Paneer Eggs ½ cup Paneer grated ½ tsp Black Pepper Salt to taste
Mint and Coriander Chutney 1 cup Mint Leaves (Chopped) ½ cup Coriander leaves (dhania patta) 1 Green chili (chopped) ½ wedge Lemon (juiced) Pinch of Black/Regular salt
Method: 1. To Make the tikkis, take all the ingredients in a bowl, adjust the seasoning & combine well 2. Shape the tikkis into rounds & make a small dent in the center with your thumb to form the nest shape. Now dip these in a thin batter made with flour & water, then coat in broken vermicelli, at this point the tikkis should look like a nest 3. Chill the birds nest for 15 mins 4. Now heat oil in kadai & deep fry till golden 5. For the paneer eggs, mix the ingredients a bowl, shape into small eggs & deep fry in hot oil for 30 secs 6. In the mean time, prepare the green chutney by mixing all the chutney ingredients in a mixer 7. For the assembly, take the birds nest, add a spoon of green chutney in the center, add couple of leaves of fresh coriander & place 3 small eggs over it 8. Serve hot with ketchup & green chutney 9. Gobble! Gobble! Gobble!

Rice Noodle Egg Nests with Sesame Slaw
¼ head purple cabbage, roughly chopped 5 cups water 6 ounces vermicelli rice noodles 1½ tablespoons lemon juice 8 eggs Pinch of salt and black pepper
Rice Noodle Egg Nests with Sesame Slaw Preheat your oven to 350F degrees and line a baking sheet with parchment paper.
Combine the purple cabbage and water in a medium saucepan and place over high heat. Boil the cabbage for 5 minutes. Drain the purple cabbage, catching the purple-tinted water in a large bowl. Discard the cabbage.
Place the vermicelli rice noodles in the purple-tinted water and let them soak for 3 minutes. The noodles will soften and turn blue. Drain, then transfer the noodles back to the bowl.
Pour the lemon juice over the blue noodles. Toss the noodles with tongs to coat every strand in lemon juice and watch as the rice noodles turn bright pink.
Crack two eggs into a small bowl and whisk. Pour the scrambled egg into the bowl with the pink rice noodles and toss to combine. Use tongs to create six equal-sized piles of rice noodles on the baking sheet. Twirl each pile into a “nest,” creating a dent in the middle of each.
Crack another egg into a small bowl. Carefully pour the egg into the center of one of the rice noodle nests. It’s okay if some of the eggwhite spills over, but make sure the yolk remains contained by the noodles. Repeat with the remaining eggs and rice noodle nests. Sprinkle the eggs with a pinch of salt and black pepper.
Slide the baking sheet into the oven and bake the rice noodle egg nests for 10 to 12 minutes, until the egg whites are set and the yolks still jiggle when you gently shake the pan.
Sesame slaw
While the rice noodle egg nests bake, make the sesame slaw. Place the sliced purple cabbage and green onion in a large bowl and toss to combine. In a separate bowl, whisk the toasted sesame oil, rice vinegar, honey, soy sauce, and sesame seeds together. Pour the dressing over the veggies and toss to coat.
Add a scoop of sesame slaw to each serving plate. Remove the baking sheet from the oven. Use a spatula to scoop up the egg nests and place them on top of the sesame slaw. Enjoy immediately ????????
