Norwegian Waffles
Cardamom, cardamon, however you want to say it, it’s what makes these waffles special. That and the beating, and the beating, and the resting, and the resting…
More good times in the kitchen with my mom. I’ll try in another video to get more out of her about growing up with a Norwegian father, and what kinds of food they ate growing up in Canada, but for now, enjoy the video and definitely make some of these waffles. I promise you can make them in your regular waffle iron, but aren’t the hearts cute?!
Enjoy!
Norwegian Waffles
From Alice Vivian (Maw’s sister; Alice’s aunt)
5 eggs
½ C. sugar
1 C. flour, sifted
1 t. ground cardamom
1 C. sour cream
4 T. unsalted butter, melted
Beat the sugar and eggs together for 5 to 10 minutes. Alternately fold in half the flour, cardamom, and the sour cream, then the remaining flour. Lightly stir in the melted butter and set the batter aside for ten minutes.
Cook according to directions for the waffle maker.
Serve with Lingonberries/Lingonberry Jam, yogurt or sour cream, and Norwegian Goat Cheese (Gjetost). Or just good old butter and sugar!
We used an electric waffle maker that makes 5 heart shaped waffles, just like Aunt Alice’s.
