How To make Oatmeal Bread
1 c Old-fashioned rolled oats
2 tb Butter or margarine
1 1/2 ts Salt
5 tb Honey
2 pk Active dry yeast
1/2 c Warm milk
3 tb Hulled sunflower seeds (opt)
3 tb Chopped walnuts(opt)
3 1/4 c White bread flour
Water Uncooked old-fashioned -rolled oats for garnish Gently simmer the oats in 1 cup of water, covered, for 30 minutes. Mix in margarine, salt and honey. Let
cool to room temperature. Meanwhile, mix the yeast into the warm milk and let stand until bubbles appear, about 10 minutes. Add to the oatmeal mixture and mix well. Add sunflower seeds and walnuts if desired. Then mix in 1 cup of the flour at a time, kneading in the last 1/4 cup of flour if needed to make a firm dough. Let stand in a covered bowl in a warm place until doubled in bulk, about 1 hour. Divide into 2 portions, knead well and form into loaves. Place in 2 well-greased 7 1/2-by-3 1/2-inch loaf pans, cover and let rise again for 20 minutes. (The dough will not rise to the top because it is low n gluten). Brush the tops of the loaves with water, sprinkle with oats and bake in 375-degree oven for 45 to 50 minutes, or until loaves are nicely golden. Remove from pans and let cool on wire rack. Ingredients:
1 cup (90g) Rolled oats
3 cups (390g) Whole wheat flour
1/4 cup (85g) Honey
1½ cups (360ml) Boiling water
1¼ teaspoons Instant dry yeast
1½ teaspoons Salt
2 tablespoons (30g) Melted butter
1 Tbsp. boiling water + 1 Tbsp. honey for brushing
Directions:
1. In a large mixing bowl, or in the bowl of an electric mixer combine boiling water, oats, honey, butter and salt. Mix and let cool slightly.
2. Add flour, yeast and stir until dough forms. Knead the dough for 7-8 minutes.
3. Place the dough in a lightly greased bowl, cover and let rise for 1 hour, until doubled.
4. Gently deflate the dough, shape it into a log. Place the log in a lightly greased 9 x 5-inch loaf pan. Cover the pan, let rise for about 1 hour or it's crowned about 1-inch over the rim of the pan.
5. Preheat oven to 350°F (175°C). stir 1 tablespoon of honey water 1 teaspoon of water.
6. Gently brush with honey mixture and sprinkle some rolled oats on top of the loaf. Bake for 40-45 minutes. If the bread appears to be browning too quickly, cover with aluminum foil for the rest of baking.
7. Let cool 10 minutes in the pan, release from the pan and allow to cool completely before cutting.

2 Ingredient Oat Bread
1.5 cup rolled oats (I purchase organic oats that are third party certified glyphosate free.)
1.5 - 2 cups water
1/4-1/2 tsp salt (optional but suggested)
Combine ingredients in a blender pitcher or cup. Allow to soak for 15-30 minutes. Blend until smooth. Batter should be pourable but not watery. It will thicken a bit as it sits. Start with less water and adjust consistency as needed by adding more.
Heat your pan over medium-high heat. Pour batter in center the center of the pan. Rotate pan to create an even circle. Allow to cook until top bubbles and looks dry (1-2 minutes) Flip and cook for an additional minute on the other side.
This bread is soft and chewy compared to typical wheat bread. Enjoy!
* This video was made over a year ago. I no longer use any ceramic pans because even the so called good ones are not safe, in my opinion.

5 cups (450 g) rolled oats OR 3+2/3 cups oat flour
1+3/4 cups (150 g) quick oats
2 tsp baking powder
1 tsp baking soda
1 ½ tsp salt
1 Tbsp sugar
2 cups (500 g) plain yogurt 1,5 %
1 Egg (medium size)
????????Instructions:
????Preheat oven to 390 F (200 C). Line a bread pan (8x4 or 9x5 inches) with parchment paper, or lightly grease with cooking spray. Set aside.
✅Grind rolled oats in a blender or food processor until they reach a flour-like consistency.
✅Mix dry ingredients. Add in oat flour, quick oats, baking soda, baking powder, salt and sugar in a mixing bowl. Add the yoghurt and egg and mix everything with a spatula. Then knead with a hands to make a smooth dough.
✅Form the dough into a round loaf about 25 cm long, roll the loaf in the rolled oats and seeds. ✅Place into the baking pan and bake about 1 hour, until a toothpick inserted in the center of a cake comes out clean
✅Allow to cool completely.
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
