How To make Old Fashioned Macaroni & Cheese
3 1/2 c Uncooked elbow macaroni (12
-oz.) 1/4 c Butter
1/4 c Flour
1 ts Salt
3/4 ts Dry mustard
1/2 ts Pepper
-Few dashes hot pepper sauce 3 1/2 c Milk
5 c (20 oz.) shredded cheddar,
-divided Cook macaroni in boiling salted water until almost tender. Meanwhile, in a small saucepan, melt butter. Stir in flour, salt, mustard, pepper and hot pepper sauce. Cook and stir until smooth. Drain macaroni; combine with butter mixture in a large bowl and mix well. Stir in milk and 4 cups of cheese. Pour into an ungreased 13x9x2" baking dish. Cover and bake at 350 degrees for 45 minutes or until bubbly. Sprinkle with remaining cheese; let stand 5 minutes before serving. Ingredients:
14oz (400g) macaroni
1 cup )115g) Cheddar cheese
3/4 cup (85g) Gruyere cheese
3/4 cup (85g) Mozzarella cheese
4 tablespoons (30g) Flour
4 tablespoons (60g) Butter
4 cups (1L) Milk
1 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Nutmeg
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl combine all the cheeses and set aside.
3. Heat large pot of salted water, cook the macaroni to al dente (1-2 minutes less then package instructions).
4. While the pasta is cooking make the sauce: In a large pot, melt the butter, add flour and whisk over medium-low heat. Cook for a couple of minutes, whisking constantly. Gradually add the milk and whisk until smooth. Cook until slightly thickens, about 5-6 minutes.
5. Gradually add 3/4 of the cheeses to the sauce and whisk until melted after each addition. Season with salt and pepper and mix. If you want to add more additions like bacon, herbs or spices, now it’s the time.
6. Drain the pasta and add to the sauce.
7. Transfer to a 12-inch (30cm) round baking dish, sprinkle the remaining 1/4 of the cheese and bake for 20-25 minutes or until golden and bubbly.
Notes:
* serve warm
* you can use any type of cheese that you like
* this is pretty basic version of mac & cheese but you can add topping like bacon, herbs and spices.

Old School Baked Mac & Cheese
Ingredients:
3 Tbsp of kosher salt
1/2 Tbsp of white pepper
3 cups of elbow macaroni
8 Tbsp of butter
2 cups of Mild Cheddar
2 cups of Colby Jack
2 cups of Monterey Jack
2 cups of Parmesan
2 cups of Velveeta cheese
3 cups of milk
3 eggs
Tsp of sugar
Directions:
Bring 8 cups of water to a boil and season water with 2 Tbsp of kosher salt. Add 3 cups of macaroni, stir, then cover and let simmer on medium heat for about 12 mins or until pasta tenderness is to your likeness. Drain pasta and return to pot or separate mixing bowl and stir in 6 Tbsp of butter until well incorporated. This is also the time to add salt and white pepper. Butter the inside of casserole dish and then add a thin layer of macaroni then cheeses on top. Repeat the layering process until you’ve reached the top of your baking dish. Make a whole in center of the top layer of cheese then set aside. Preheat oven to 350 degrees. In a separate mixing bowl whisk together milk, eggs, and sugar then pour that mixture in the center of the casserole dish where hole was made until you can see the custard coming up side of dish. Cover top back with cheese then bake covered with foil for 30 mins. Uncover then bake an additional 10 mins or until cheese is brown and bubbly. Wait at least 10 mins before serving.
Tip: Never add oil to pasta water. It won’t let your sauce properly adhere to your pasta.
Use block cheese that you shred yourself for better results. Pre shredded cheese has a powder on it that keeps it from sticking together and it also alters the taste.

Baked Macaroni & Cheese Recipe
LOOK NO FURTHER! LADIES AND GENTLEMEN BEHOLD THE MAC AND CHEESE RECIPE THAT WILL MAKE PEOPLE STALK YO ASS! LOL LITERALLY!!
[1] box of elbow macaroni (16oz)
Sharp Cheddar Cheese
1 brick of Velveeta Cheese (16oz is in the video)
[2] Cans of Evaporated Milk (Not to be confused with condensed milk)
Grounded Annatto (Do Not Use SAZON as a substitute)
Monterey Jack Cheese (For the top)
Foil pan
Butter
Salt
Boil Macaroni
(DO NOT ADD OIL OR BUTTER TO THE WATER)
Preheat oven to 375
*Cheese Sauce*
In a sauce pan melt 2 tablespoons of butter
Then add 2 tablespoons of flour and whisk it.
-This is called a roux. (This is a thickening agent)
Whisk for 2 minutes or until you get a doughy crumb consistency.
Whisk in 1/3 cup of your milk until you get a smooth paste.
Then add the rest of your milk.
Whisk the milk on high heat until it gets warm.
Add Grounded Annatto until you get your desired color.
Add 2 tsp of salt.
Whisk.
Lower Heat.
[Cut the Velveeta block in half.
You'll be using 1 and 1/2 blocks of this.
and Half of your sharp cheese.]
Whisk in all your cheeses.
Turn up to medium high heat and WHISK until the sauce thickens.
When you get your desired thickness pour cheese sauce over Macaroni.
Top with the remainder of Sharp Cheddar Cheese and a 1/3 Block of
Monterey jack.
Bake covered with foil for 10 mins
Take off the foil and bake for another 20 - 30 mins or until the top becomes golden brown.
