How To make Old Fashioned Macaroni and Cheese
4 oz Macaroni; cooked & drained
(to make 2 cups) 1 c Milk
2 tb Butter or margarine
2 tb All-purpose flour
1/2 ts Salt
1 c Cheddar cheese; shredded
1/3 c Dry bread crumbs
1 tb Butter or margarine; melted
Melt butter or margarine over low heat; stir in flour and remove from heat. Add milk, stirring constantly. Return to stovetop; over low heat cook, stirring constantly, until mixture is thickened. Stir in cheese and continue coooking until cheese is melted. Pour milk and cheese mixture over macaroni and mix well. Turn into a lightly greased baking dish. Mix bread crumbs with melted tablespoon of margarine. Sprinkle with buttered crumbs. Bake for 30 minutes at 350 F until top is golden brown. Source: Best Recipes April/94 From the collection of K. ***FULL LIST OF INGREDIENTS***
- 1/2 Box Macaroni Pasta (Note: I'm using a 16oz sized box, so half would be 8oz)
- 2.5 Cups Water
- 2.5 Cups Chicken Broth
- Pinch of Salt
CHEESE SAUCE:
- 2 Tbsp Butter
- 2.5 Cups Heavy Cream ( Lower fat content creams will separate or curdle! Heavy Cream is the best option for this recipe!)
- 2 Cups Shredded Sharp Cheddar Cheese
-1 Cup Mozzarella Cheese ( FEEL FREE TO USE ANY COMBINATION OF CHEESES THAT YOU PREFER )
- 4oz Cream Cheese (Optional)
- 1/2 Tsp Seasoned Salt
- 1/2 Tsp Onion Powder
- 1/2 Tsp Black Pepper
- 1/2 Tsp Paprika
FAQs and Tidbits:
1. In the very beginning of the video, half and half is pictured, but heavy cream was use! The correction was made on screen.
2. Can I use milk or half and half?
While you can use any type of cream or milk that you prefer, heavy cream offers the highest fat content and gives the best results when making sauces. Lower percentage creams like half and half tend to curdle or separate at higher temperatures. That would be detrimental to your cheese sauce making it gritty or lumpy!
3. Do not over cook the macaroni! It could make your final dish mushy.
4. The cream cheese is totally optional but adds an extra richness and thickness to the cheese sauce. For a sauce with a thinner result, the cream cheese can be left out.
5. If your sauce gets too thick from too much cheese, you can always add a few tablespoons of more cream to thin it out!
6. When making macaroni and cheese, good quality cheese makes a huge difference in the end product. The most cost efficient way to substitute expensive bags of shredded cheese like Tillamook or Sargento is to just shred your own! It gives the best results every time!

Original recipe
Mac N cheese
Ingredients-
64 oz water ( or fill the pot halfway with water)
4 tbs chicken bouillion powder
1 tsp salt
1 1/ cup sour cream ( divided)
32 oz half n half
About two bags of cheddar cheese
( should need 8-10 cups) I used a mix of medium and sharp cheddar
2 eggs ( before we used 3, but traditionally I like to use two eggs so that the Mac is more on the creamy side.
1 stick of butter cut into pieces. Plus more to grease the pan
Seasonings to use
2 tbs garlic powder
2 tbs onion powder
1 tbs paprika
1tsp black pepper
3 tbs salt
Or you can use a really good seasoning salt.

Old School Baked Mac & Cheese
Ingredients:
3 Tbsp of kosher salt
1/2 Tbsp of white pepper
3 cups of elbow macaroni
8 Tbsp of butter
2 cups of Mild Cheddar
2 cups of Colby Jack
2 cups of Monterey Jack
2 cups of Parmesan
2 cups of Velveeta cheese
3 cups of milk
3 eggs
Tsp of sugar
Directions:
Bring 8 cups of water to a boil and season water with 2 Tbsp of kosher salt. Add 3 cups of macaroni, stir, then cover and let simmer on medium heat for about 12 mins or until pasta tenderness is to your likeness. Drain pasta and return to pot or separate mixing bowl and stir in 6 Tbsp of butter until well incorporated. This is also the time to add salt and white pepper. Butter the inside of casserole dish and then add a thin layer of macaroni then cheeses on top. Repeat the layering process until you’ve reached the top of your baking dish. Make a whole in center of the top layer of cheese then set aside. Preheat oven to 350 degrees. In a separate mixing bowl whisk together milk, eggs, and sugar then pour that mixture in the center of the casserole dish where hole was made until you can see the custard coming up side of dish. Cover top back with cheese then bake covered with foil for 30 mins. Uncover then bake an additional 10 mins or until cheese is brown and bubbly. Wait at least 10 mins before serving.
Tip: Never add oil to pasta water. It won’t let your sauce properly adhere to your pasta.
Use block cheese that you shred yourself for better results. Pre shredded cheese has a powder on it that keeps it from sticking together and it also alters the taste.
