How To make Old Fashioned Pineapple Upside Down Cake
3 cn 8 1/2 oz size sliced pine-
Apple in heavy syrup (12) 1/4 c Butter
2/3 c Light brown sugar, packed
1 c Unsifted flour
1/3 c Pecan or walnut halves
3/4 c Sugar
1 1/2 t Salt
1/4 c Shortening
1/2 c Milk
1 Egg
1 c Heavy cream, chilled
Preheat oven to 350F. Drain the pineapple slices, reserving 2 T syrup. In a heavy cast iron frying pan (10"), melt the butter over medium heat. Add brown sugar, stirring until the sugar is melted. Remove from heat, and arrange 8 of the pineapple slices on the sugar mixture, overlapping the slices slightly around the edge of the pan. Put one slice in the center. Place the walnut or pecan halves in the center of each slice of pineapple. Arrange around the inside edge of the skillet the remaining pineapple, cut in halves. Put pecans or walnuts in the center. In a medium bowl, mix the flour, sugar, baking powder, and salt.Add shortening and milk. Beat 2 minutes at high speed or until mixture is smooth.Add egg and reserved 2 T of syrup. Beat 2 minutes longer. Gently pour cake batter over pineapple in skillet. Spread evenly being careful not to disarrange the pineapple. Place on center rack of oven and bake 40-45 minutes, or until cake springs back to light touch. After the cake is done, let the skillet stand on a wire rack 5 minutes to cool just slightly, and then loosen edges with a small spatula. Place serving platter over the cake, and turn upside down. Shake gently, and lift off skillet. Serve with 1 cup heavy cream whipped.

A classic cake in the old southern church suppers is a pineapple upside down cake. We both were raised in an environment that saw these cakes frequently. Although it may not carry the same reputation it once had the pineapple upside down cake is still a winner when done right.
Ingredients:
1/4 cup unsalted butter
1/2 cup packed light brown sugar
10 pineapple rings (20oz can)
Maraschino cherries
Cake:
1 stick (1/2 cup) unsalted butter, softened
3/4 cup sugar
2 large eggs
2 teaspoons vanilla extract
2 tablespoons reserved pineapple juice
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons cornstarch
1/2 cup buttermilk

AN EXTRA-LARGE TUBE PAN REQUIRED
1 CUP SHORTENING
3/4 CUP SALTED BUTTER (ROOM TEMPERATURE)
3 CUPS GRANULATED SUGAR
9 RAW EGGS
3 CUPS ALL-PURPOSE FLOUR
2 TSP. BAKING POWDER
1 TSP. SALT
2 TSP. VANILLA FLAVORING
20 OZ. CAN CRUSHED PINEAPPLE
1/2CUP BROWN SUGAR
Preheat the oven to 350 degrees.
Pour half of the can of pineapple into a separate bowl. Using amixer,mix shortening, butter until creamy. Add sugar and beat until fluffy.Now add eggs one at a time. Add baking powder & salt. Add flour 1/2 cup at a time. Add flavorings.Mix on medium low speed for 2 minutes tops. Mix in ½ can of pineapple. Spread ¼ stick of room temperature butter in bottom of tube pan (not a two part pan, should be solid) Spray pan with cooking spray well including inside flute. Add brown sugar around bottom. Partially drain the remaining pineapple and add to bottom of pan evenly. Press down flat. Fill pan ¾ full with cake batter. Bake for 30minutes at 350 degrees. Now turn the oven down to
325 degrees and bake for 35-40 more minutes.
