Apple in heavy syrup (12) 1/4 c Butter
2/3 c Light brown sugar, packed
1 c Unsifted flour
1/3 c Pecan or walnut halves
3/4 c Sugar
1 1/2 t Salt
1/4 c Shortening
1/2 c Milk
1 Egg
1 c Heavy cream, chilled
Preheat oven to 350F. Drain the pineapple slices, reserving 2 T syrup. In a heavy cast iron frying pan (10"), melt the butter over medium heat. Add brown sugar, stirring until the sugar is melted. Remove from heat, and arrange 8 of the pineapple slices on the sugar mixture, overlapping the slices slightly around the edge of the pan. Put one slice in the center. Place the walnut or pecan halves in the center of each slice of pineapple. Arrange around the inside edge of the skillet the remaining pineapple, cut in halves. Put pecans or walnuts in the center. In a medium bowl, mix the flour, sugar, baking powder, and salt.Add shortening and milk. Beat 2 minutes at high speed or until mixture is smooth.Add egg and reserved 2 T of syrup. Beat 2 minutes longer. Gently pour cake batter over pineapple in skillet. Spread evenly being careful not to disarrange the pineapple. Place on center rack of oven and bake 40-45 minutes, or until cake springs back to light touch. After the cake is done, let the skillet stand on a wire rack 5 minutes to cool just slightly, and then loosen edges with a small spatula. Place serving platter over the cake, and turn upside down. Shake gently, and lift off skillet. Serve with 1 cup heavy cream whipped.

Shopping List:
Vanilla Cake:
1/2 cup unsalted butter (room temp)
1 cup white sugar
2 eggs (room temp)
1 tsp vanilla extract
1 1/2 cups all purpose flour
1 pinch of salt
1 1/2 tsp baking powder
1/2 cup whole milk
Topping:
1/4 cup melted butter
1/2 cup brown sugar
10-12 pineapple rings (Optionally soak them in Grand Marnier for 1 hour)
1 jar maraschino cherries
Directions:
Preheat oven to 350 degrees. Pour your melted butter into a 10 or 12 cast iron skillet. Use a brush to make sure the bottom and edges are covered evenly. Next, add the brown sugar evenly atop the melted butter. Optionally you can soak the pineapples in the alcohol of your choice for 30-60 minutes and then dry the pineapple and cherries. Next, add your pineapple slices over the bottom of the pan as seen in the video. After the pineapples are arranged, place 1 cherry in the middle of each.
Make your vanilla cake by mixing the butter and sugar in a mixing bowl first. Then add 1 egg at a time, mixing well to combine. Next add your vanilla. IN a separate bowl, whisk together the flour, baking powder, and salt. Next, alternate adding a little flour mixture and a little milk and mix until your cake batter is formed. Pour cake batter into the skillet and then place in the oven for 25 minutes uncovered and then 10 minutes covered. You make need an additional 5-7 minutes depending on the size of skillet and your oven. Use the toothpick test to determine when the cake is done. Allow the cake to cool for 15 minutes and then flip it over - carefully.

Pineapple Upside Down Cake (Classic Version) - Joyofbaking.com
Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make Pineapple Upside Down Cake. Pineapple Upside Down Cake is a throwback to the 1920s. A time when canned pineapple was all the rage. One look at this cake and you can see why it was so popular. It is lovely, glistening slices of sweet and sticky caramelized pineapple sitting happily on top of a fluffy white butter cake.
