How To make One Apiece Meat Loaves
1 Cucumber,large
1 lb Ground beef
3/4 c Bread crumbs,fresh
1 T Onion,grated
3/4 t Salt
1/4 t Pepper
1 Egg
8 Cheese slices,past. process
1. Peel cucumber. Cut cucumber lengthwise in half. Using spoon, scoop out
seeds from each cucumber half. Coarsely shred enough cucumber to make 1 cup. Slice any remaining cucumber to use as garnish. 2. In medium-sized bowl, combine shredded cucumber, ground beef, bread
crumbs, grated onion, salt, pepper, and egg. Divide meat mixture into 4 portions. 3. Unwrap 4 cheese slices; fold each into 1 1/2x3/4x1/2" chunk.
4. Shape each portion of meat around 1 chunk of cheese, making four 4x2"
oval loaves. Arrange loaves in 12x8" baking dish; cover dish with waxed paper. Cook at medium high (70% power) 9 minutes. Remove waxed paper rotating dish a half turn; top each loaf with a slice of cheese. Cook at medium high 2 minutes longer. Let meat loaves stand 3 minutes. Remove from baking dish and arrange on warm plate. Garnish with cucumber slices.

~ cooking for one: meat loaf for dinner ~
There are many ways to make a meat loaf-here's mine.
RECIPE FOLLOWS:
Meat Loaf with Brown Sugar Glaze
1 3/4 lbs ground beef, or a combination of beef and pork
1/2 cup of finely chopped onion
2 medium cloves garlic, minced
2 eggs
1 cup of fresh bread crumbs
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon EACH: onion and garlic powders, Italian seasoning
Combine all ingredients in a large bowl. Mix well. Shape into loaves and bake covered on a foil lined cookie sheet in a 350F oven for 45 to 50 minutes, or until internal temperature reaches 170F. Top with Glaze.
GLAZE:
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon yellow mustard
Combine all ingredients. Spread on hot meat loaves. Return to oven and bake uncovered an additional 10 minutes...or until glaze is thick.

Depending on what ingredients you use these can be very low point: 2-4sp a serving! 3 oz of low fat ground beef is usually 1 sp per ounce on all plans! ground turkey would make this even lower sp!

Ingredients
1 pound 93/7 ground beef (3 oz is 4 sp)
1/3 cup breadcrumbs or oatmeal (I always use oatmeal)
Spices as described
1 egg
1/4 cup of sugar free ketchup
1 meddium onion chopped
Salt and pepper
2 TBS Worcestershire sauce
1tsp avacado oil
Instructions
Preheat oven to 350 degree
Saute chopped onion in 1 tsp avacado oil as shown
Mix all the ingredients together in a bowl as shown in the video
Press the meat into the muffin cups
Top with a dollop of tomato sauce/ketchup on each one.
Cook for 30-35 minutes.
