White Chocolate Macadamia Nut Cookies with a Twist!
These are one of my favorite cookies to make during the holiday season or anytime really ! Super easy to make and just as delicious ! Stay tuned for more Holiday baking videos
Ingredients !
1 cup Light Brown Sugar
1 cup or 2 sticks Unsalted Butter (softened)
Zest of half an orange
2 eggs and 1 yolk .
2 1/2 cups All Purpose Flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Corn Starch
Utensils!
Measuring cups and spoons
Stand mixer with paddle attachment ( electrical hand mixer works great as well)
Rubber/ Silicon Spatula
Microplane or fine grater/ Zester
Cookie tray
Silicon Mar or Oven Proof Parchment Paper.
Directions !
-Preheat over to 350 F.
-Add light brown sugar and softened butter into mixing bowl .
-Cream halfway by using medium speed for about 30 seconds.
-Zest the orange into butter/sugar mix.
-Finish creaming by using medium speed for 2 mins or until mixture looks like a paste .
-Add each egg 1 by 1 .(crack each egg separately before adding to mix to check if the egg isn’t bad)
- Mix after every egg on low speed until egg is barely incorporated .
scrape the bowl with the spatula
-In a separate big bowl , whisk together flour , salt , baking soda , cornstarch .
-Once whisked thoroughly , add dry mix into wet mix (butter,sugar,eggs) a third at a time .
-Mix on medium low speed for about 30 secs until barely incorporated , scraping the sides of bowl after every mix .
-Once all the dry mix is added, add the cranberries , macadamia nuts and white chocolate chips manually by folding them in with a silicon or rubber spatula .
-On a lined cookie tray , make heaping tablespoons cookie mounds (or desired size) and place on 6 cookie mounds per tray .
-Bake in the over for approximately 8-10 or until edges are golden brown .
-Take out of the oven and let them cook for 10 mins.

Orange White Chocolate Chip Cookies
These delicious cookies are great anytime and a perfect new cookie to add to your Christmas baking.
Orange White Chocolate Chip Cookies
1 cup butter, softened
½ cup granulated sugar
½ cup brown sugar
1 egg
Zest of one large orange
Juice of one large orange
2 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
2 cups white chocolate chips
Preheat oven to 350 degrees.
Cream butter and sugars until light and fluffy. Beat in egg and orange zest. Stir flour, baking soda and salt together. Add flour mixture a little at a time to creamed mixture. Alternate with orange juice. Mix just until combined. Fold in white chocolate chips.
Drop rounded tablespoons of dough onto ungreased cookie sheet about 1 ½ inches apart. Bake for 10 to 12 minutes or until edges are golden brown. Allow to cool on cookie sheets for 2 minutes before transferring to a wire rack.
Yield: 3 dozen

Assorted Shortbread Cookies Recipe So EASY & Delicious | ONLY 3 main ingredients
Assorted Shortbread Cookies – To be honest, I’m not quite a cookie person, but butter cookies or shortbread are my favourite cookies. My sister made these and she gave me as a gift during the Lunar festival, I was like wow, they are amazingly delicious. I want to make them too. This recipe is pretty amazing with only 3 main ingredients, flour, butter and sugar, yes that is all. I added cranberries, pistachios and almonds in 3 different variations respectively, vanilla, matcha and chocolate. Best gift for any festivals. If you have tried “Walkers” Shortbread (I also have a box here to compare), I can tell you these homemade shortbread are as delicious as Walkers or even better. As I was editing this video, I was craving for it and kept taking from my kitchen. Yummy!

Ingredients:
226g [1 cup] unsalted butter, softened*
100g [½ cup] fine sugar
1 tsp vanilla extract
¼ tsp salt
*if you use salted butter, then just omit the salt
Vanilla:
113g [¾ cup + 3 tbsp] all-purpose flour
25g [¼ cup] dried cranberries, chopped
Matcha:
100g [¾ cup + 1 tbsp] all-purpose flour
10g [2 tbsp] matcha powder
25g [¼ cup] pistachios nuts, chopped
Chocolate:
95g [¾ cup + 1 tbsp] all-purpose flour
15g [2 tbsp] cocoa powder
25g [¼ cup] almond nuts, chopped
Instructions:
1. In a large mixing bowl, add softened butter and sugar. Mix until creamy, fluffy and pale.
2. Add vanilla extract and salt, mix until well combined.
3. Divide the batter evenly into 3. It’s recommended to use a weighing scale for better result.
Vanilla:
1. In the bowl of butter and sugar mixture, sift the flour into the bowl.
2. Press and fold with a spatula, as shown in the video, until it almost comes together.
3. Add in the chopped cranberries. Knead until it comes together.
4. Transfer the dough onto a parchment paper, one half side of the parchment paper, so that the other side can be used to cover the top.
5. Roll out the dough to about 6mm thick. Use a scraper to shape the sides neatly and evenly. Cover back the dough with the parchment paper.
6. Refrigerate for 1 hour or until it is hardened.
7. After 1 hour, cut the dough into the size or shape you desire. Place the cookie dough onto a baking pan.
8. Bake in preheated oven at 160°C/320°F for 20 minutes or until they are lightly brown.
9. Cool on a cooling rack.
Matcha:
1. In the bowl of butter and sugar mixture, sift the flour and matcha powder into the bowl.
2. Press and fold with a spatula, as shown in the video, until it almost comes together.
3. Add in the chopped pistachio nuts. Knead until it comes together.
4. Transfer the dough onto a parchment paper, one half side of the parchment paper, so that the other side can be used to cover the top.
5. Roll out the dough to about 6mm thick. Use a scraper to shape the sides neatly and evenly. Cover back the dough with the parchment paper.
6. Refrigerate for 1 hour or until it is hardened.

8. Bake in preheated oven at 160°C/320°F for 20 minutes or until they are lightly brown.
9. Cool on a cooling rack.

I love the orange and cranbeery with the white chocolate chips in every bite. I make these all year round, but they are always on my Christmas Cookie Baking list. The Cranberry and Orange add such a fresh taste and the cookies bring variety to
a holiday gift tray. I also make Cranberry Orange Biscotti dipped in white chocolate and semi-sweet chocolate, although I prefer the white. These cookies are very easy to make and store well in an air tight container. I usually make these, along with Chocolate Chip Cookies recipe, Oatmeal Chocolate Chip Cookies recipe, Nutella Cookies recipe, Chocolate Chip Coconut Macaroons, Mint Chocolate Chip Brownies, Peanut Butter Cookies, Snowballs and Sugar Cookies, which are fun to decorate. White Chocolate Chip Cookies Recipe:
4 oz or 113g unsalted butter, melted
1/2 cup or 99 g granulated sugar
1/2 cup or 99 g packed brown sugar
1 egg (large)
1/2 tsp or 3 g baking soda
1/2 tsp or 6 g kosher salt
1 tsp pr 4 g vanilla extract
1/8 tsp or .5 g ground cinnamon
1 1/2 cup all purpose flour (213 g)
1 1/4 cup or 219 g white chocolate chips
1 cup or 125 g macadamia nuts
In a large bowl, mix together melted butter, brown sugar, and white sugar thoroughly until combined. Add an egg and mix until it's pale and ribbony.
Add the baking soda and pour the vanilla directly over it, kosher salt, and ground cinnamon. Mix well.
Add flour, white chocolate chips, and chopped macadamia nutse.
1 1/4 cup white chocolate chips
1 cup roasted & salted chopped macadamia nuts
mix until combined.
Scoop onto a parchment-lined baking sheet (makes 18-24 cookies)
Chill for 10 minutes, then Bake 8-10 minutes at 350º F or until golden brown
