Italian Style Pot Roast
Not Into Turkey? No Problem… I got you covered for the holidays :
Paul’s Holiday Italian Style Pot Roast
This is Holiday dinner in a pot with layers of flavors so good that you are going to want to make this for EVERY holiday. The porcini mushrooms elevate this to a whole new level.
Ingredients
● 3 lb Chuck roast
● 2 tbsp olive oil
● Salt & fresh cracked black pepper
● 1 yellow onion chopped
● 3 cloves garlic, crushed
● 1 cup red wine
● 1 (14 oz can) beef broth
● 1 oz dried porcini mushrooms
● Sprig of fresh rosemary and thyme
Instructions
Preheat the oven to 350 degrees F.
Pat the beef dry with paper towels and season generously with salt and pepper. In a Dutch oven, heat 2 tablespoons of oil over medium-high heat. Add the beef and cook until browned on all sides, about 14 minutes. You want to create a nice crust here! Remove the beef and set aside.
Reduce the heat to medium. Add the onions. Cook, stirring frequently, until tender, about 9 minutes. Add the garlic and cook for 1 minute until aromatic. Add the wine and raise the heat so that it begins to boil, scraping up the brown bits that cling to the bottom of the pan with a wooden spoon.
Stir in the broth, and mushrooms. Return the beef to the pot and bring the liquid to a boil.
Add a the rosemary and thyme , cover the pot and transfer to the oven. Cook for one hour, then, carefully flip the meat to the other side. Add the rest of the broth, cover and cook for another hour.
Now turn the oven to 300 and cook for 1 more hour.
Remove from the oven. Carefully remove the meat from the pot and lets make the gravy.
using an immersion blender on low / medium setting, blend all the liquid from the pot into a smooth silky gravy. Add a pinch of salt.
Cut the beef into 1-inch slices against the grain and place on a platter
Spoon some of the sauce over the meat and serve the remaining sauce on the side.
