LAY HO MA (how's it going in Cantonese)! Peanut butter is definitely not just for toast. Join me in this episode and learn how to make a deliciously nutty peanut butter udon noodles recipe today!
Ingredients:
3 tbsp peanuts
1 tbsp white sesame seeds
3 pieces garlic
2 sticks green onions
250g udon noodles
1 tbsp chili oil (
1 tsp sweet paprika
1 tsp toasted sesame oil
1 tbsp soy sauce
1 tsp dark soy sauce
1 tsp rice vinegar
1 tbsp maple syrup
2 tbsp peanut butter
2 tbsp water
Directions:
1. Bring a pot of water to boil for the noodles
2. Heat a frying pan to medium heat. Add the peanuts and white sesame seeds. Toast for 1min. Transfer to a pestle and mortar. Then, coarsely crush and set aside
3. Grate the garlic and chop the green onions
4. Boil the udon noodles for half the time to package instructions (in this case 3min)
5. Heat up the frying pan to medium low heat. Add the chili oil followed by the garlic. Cook for about 45 seconds. Then, add the sweet paprika, toasted sesame oil, soy sauce, dark soy sauce, rice vinegar, maple syrup, peanut butter, and 2 tbsp water. Give the pan a good stir
6. Strain out the noodles and add to the peanut sauce. Add the green onions, turn the heat to medium, and cook the noodles for a couple of minutes while stirring
7. Plate the noodles and sprinkle over the crushed peanuts and white sesame seeds

makes 4-5 servings
Ingredients:
12oz (340g) Pasta of your choice
1/2 cup (125g) Peanut butter, smooth or chunky
2 tablespoons Soy sauce
2 tablespoons Lemon juice/vinegar
2 teaspoons Sesame oil
1-2 tablespoons Sriracha
1/3 cup (80ml) Water
Salt to taste
Black pepper to taste
1-2 cloves garlic, minced
1/2 tablespoon Ginger paste
Sesame seeds, optional
Toasted peanuts, roughly chopped for garnishing
Green onions for garnishing
Directions:
1. Fill a large pot with water, add 1 tablespoon of salt and bring to a boil.
2. Meanwhile make the sauce: In a saucepan combine peanut butter, soy sauce, vinegar, sesame oil, water, seasoning, minced garlic, ginger and sriracha (optional). Cook over low heat, stirring, until combined and smooth.
3. When the water is boiling, add the pasta and cook according to package directions.
4. Drain the pasta and place in a large bowl. Add the sauce and toss to combine.
5. Garnish with sesame seeds and chopped peanuts.
Notes:
• You can replace the pasta with noodles and follow the same directions.

8 ounces dry noodles double the amount if you use pre-cooked noodles like vacuum-packed udon noodles.
Peanut Sauce
½ cup peanut butter
⅓ cup soy sauce
3 tablespoons lime juice
2 tablespoons maple syrup
2 teaspoons sriracha sauce
1 clove garlic grated
1 teaspoon ginger grated
Vegetables
1 cup red bell pepper cut into strips
1 large carrot cut into matches or grated
2 green onions thinly sliced, save green tops for garnishing
2 cups broccoli florets boiled
¼ cup roasted peanuts coarsely chopped
Garnish (optional)
4 wedges lime
1 tablespoon sesame seeds
1 drizzle sesame oil
2 tablespoons crunchy onions
