(1/4 to 1/2) 1/4 teaspoon salt -- (1/4 to 1/2) 1/8 teaspoon pepper DIRECTIONS: Cook mostaccioli to desired doneness as directed on package. Drain; rinse with hot water. Heat olive oil in large skillet over medium-high heat until hot. Add bell peppers and onions; cook and stir 2 to 5 minutes or until crisp-gender. Add mostaccioli, fennel, salt and pepper; blend well. Cook an additional 3 to 5 minutes or until mixture is thoroughly heated, stirring occasionally Dietary Exchanges: 2-1/2 Starch, 2 Vegetable, 2 Fat.

Pasta with Fennel, Bell Peppers, and Spinach

Hi everyone! Welcome back to the channel. Today we will be exploring quinoa pasta with fennel, bell peppers, and spinach. This is a vegetarian pasta dish.
Ingredients: 2 tbsp of olive oil 1 tbsp of minced garlic 1 tbsp of minced jalapeno 1 cup of chopped fennel 1 cup of chopped (red) bell pepper 2 cups of chopped spinach 1 tbsp of minced Herbs ¼ a cup of olives ¼ a cup of parmesan cheese About 2 cups of cooked pasta (I used quinoa pasta, but any kind of pasta will work very well with this recipe)
What to do: 1. Add olive oil to the hot pan 2. Add the garlic and jalapeño to the pan 3. Let it cook for a bit, until the garlic turns brown 4. Then add the fennel and peppers, sauté occasionally for 2--5 minutes (It matters how crunchy or soft you want the vegetables) 5. After you cook the vegetables to the desired texture, add in the spinach 6. Sauté, then add the pasta, a tsp of salt, the olives, and the herbs 7. Mix everything together. You can either incorporate the cheese while mixing the pasta or add it after plating.
