Tandy Cake Bars | Chocolate And Peanut Butter
Tandy Cake Bars are an old fashioned treat that’s been around for a very long time, it has layers of peanut butter and chocolate atop a light vanilla cake. This simple combination of flavors goes perfectly with a glass of milk and it is everybody's favorite.

INGREDIENTS (makes 9 bars)
2 cups (200g) sugar
4 eggs, room temperature
2 cups (257g) all-purpose flour
2 teaspoon (11g) baking powder
1 teaspoon (6g) vanilla bean paste
Pinch of salt
1 cup (240g) whole milk, lukewarm
2 cups (480g) smooth peanut butter
20 ounces (650g) milk chocolate chips
INSTRUCTION
Preheat the oven to 350F (176C)
1. In a large bowl crack the eggs, add sugar, whisk on high speed for 5 minutes, using an electric whisk. Slowly pour in the milk while mixing at low speed. Add vanilla bean paste. Sift in all-purpose flour, baking powder, and salt. Mix it all to combine on low speed for 30 seconds.
2. Pour batter into a parchment paper-lined 11x15 baking tray. Spread the mixture evenly and bake in a preheated oven for 35-40 minutes.
3. Spread peanut butter over hot cake. Refrigerate for 2 hours.
4. Melt milk chocolate chips in the microwave, then spread over the cooled cake. Let chocolate set for about 1 hour. Slice into 9 bars.
5. Enjoy with a glass of milk.

Did you know that you can make them at home? They really are quite easy to make and I think every bit as good. All that is required is to melt some chocolate, place a little in a candy cup, top with a little peanut butter mixture, and then drop a little more chocolate on top. What you end up with is a shell of chocolate with a smooth and creamy peanut butter filling inside. So delicious that you may want to make a double batch.

Makes 6-8 cups
Ingredients:
225g (8oz) Dark chocolate
5 tablespoons (70g) Coconut oil (for the chocolate mixture)
1/2 cup (125g) Natural creamy peanut butter
3 tablespoons (42g) Coconut oil (for the peanut butter mixture)
Directions:
1. Prepare 8* silicone muffin cups or paper cupcakes liners.
2. Chop the chocolate and place into a heatproof bowl, add half of the coconut oil.
3. Set the bowl over a pot with simmering water (double boiler). Melt the chocolate completely, turn the heat off, leave the bowl on the pot to keep the chocolate warm and melted.
4. In a separate bowl mix together peanut butter with the remaining coconut oil.
5. Fill each muffin cup with 1-2 tablespoons of melted chocolate and place in the freezer for 15 minutes, until set. Then, pour 1-2 teaspoons of the peanut butter mixture to each cup and place in the freezer for another 15 minutes. Then, pour another portion of melted chocolate on the top of the peanut butter layer. Place in the fridge until set.
Notes:
• In the video I used 6 muffin cups for this quantity, BUT they coming pretty big for one person, so I highly recommend to divide the filling among 8 cups. Make sure the chocolate layers are not too thick, otherwise it will be too hard to bite.
• Store the cups in the fridge, if you store them in the freezer, place in room temperature 30 minutes before serving.
• For the chocolate layers, you can use combination of dark and milk chocolate, or just milk chocolate.
