How To make Pear and Almond Pancakes
5 Bartlett pears
1 pk Buttermilk pancake mix
Vanilla 1 pk Slivered almonds
10 oz Light maple syrup
10 oz Fig filling
5 oz Cane sugar
Whipped butter Powdered sugar (From the Modern Diner, Pawtucket, R.I.) Core, peel and chop pears to 1/2" chunks. Coat in syrup of 5 ounces water, 5 ounces sugar and refrigerate overnight. Prepare enough pancake mix for 4 people and add a small amount of vanilla for taste. Pour batter on griddle and immediately add pears and preferred amount of almonds to the cakes. Flip carefully with bubbles appear. Heat maple syrup and fig filling in a saucepan. Top pancakes with heated syrup, whipped butter and powdered sugar.

PEAR + CINNAMON BREAKFAST CAKE RECIPE
2 ripe pears, cored and chopped
The zest from one orange (preferably organic)
2 tbsp fresh orange juice (from the same orange)
1 cup roasted and unsalted almond butter
¼ cup honey
2 eggs
1 tsp of vanilla beans (or 2 tsp vanilla extract)
1 tbsp cinnamon
1 tsp fresh ground nutmeg
½ tsp salt
Directions:
Pre-heat oven to 350 In a food processor combine one pear, orange zest, orange juice, and almond butter and pulse until everything is well combined.
Add in honey, eggs, vanilla, cinnamon, nutmeg, and salt and once again pulse until combined.
Pour batter into an 8x8 glass pyrex dish that you have coated with cooking spray. Sprinkle the remaining pear over the batter and then use a spatula to gently push the pears under the surface. Bake at 350 for about 30 minutes.
Top with a dollop of fresh whipped cream or some Greek yogurt. Enjoy! Makes 9 servings.

Alpro Recipe - Amazin Raisin Pancakes

Serves: 4 people
Preparation time: 20 minutes
Ingredients
225ml Alpro Almond Original Drink
115g flour
2 eggs
30ml of cold water
25g of white sugar
A handful of raisins
1 tbsp margarine
A pinch of salt
Method
1. Sift the flour with a pinch of salt and sugar into a medium sized bowl and make a well in the middle. Mix the Alpro Almond Drink and water together. Break the eggs into the well and start whisking slowly. Add the Almond Drink and water in a steady stream, whisking constantly until smooth. Afterwards add the raisins
2. Take a small frying pan, place it on a high heat and add a bit of margarine. After melting the margarine, pour in a small amount of the pancake mixture. Once the mixture takes on its shape, turn regularly until the pancake is golden brown on each side.
3. Serve with your favourite toppings.

VEGAN PUMPKIN PANCAKES:
VEGAN PANCAKE RECIPES
1 cup white whole wheat flour (sub 1/4 cup oat flour - super thin pancake - good flavor)
1 tablespoon baking powder
pinch salt
1 cup unsweetened almond milk
1 tablespoon maple syrup
1 tablespoon coconut oil
In a large bowl combine flour, baking powder and salt, mix together.
Add in the almond milk, maple syrup, coconut oil and stir until well combined. Allow the mixture to sit for 5 minutes so the baking soda has the to active. You will notice that the batter because light and fluffy, that’s how you know it’s time to make the pancakes.
Heat a large non-stick skillet over a medium-low heat and coat the pan with some coconut oil.
Scoop up 1/4 cup of batter and drop them into the pan forming small-medium sized pancakes. Allow to cook until you see small bubbles forming on the top of the pancake, gently flip and cook for another two minutes or until the pancakes are golden brown and cooked through.
Remove from pan and repeat until you have finished all the batter. Serve with your favorite pancake toppings and enjoy!
Makes 8-10 small pancakes. Serves 2.

❇️1/2 cup dairy free milk
❇️2 pears ????
❇️2 eggs/chia/flax egg
❇️1 tsp chia seeds
❇️1/2 cup almond flour
❇️1 tsp gluten free baking powder
✏️Note:
▪️If you are using chia/flax egg, add another 1/2 cup dairy free milk.
▪️Use a drop of coconut oil in the pan or any oil you like to prevent sticking.
