A great little dish, comes together rather quickly. A nice game day appetizer, side dish or just a damn tasty munchie!!

Amish Onion Fritters
Ingredients:
2-3 cups finely chopped onions
¾ cup flour
1 TBS Sugar
2 TSP baking powder
Salt & Pepper to taste
1 TBS Corn meal
¾ cup milk
Cooking oil for shallow fry
Dash or two of hot sauce (optional)
Instructions:
While skillet is heating to 350 degrees with oil
Mix all dry ingredients in large mixing bowl
Mix until blended the add in milk and onion
Mix again
Once skillet is ready, using a tablespoon, scoop batter and gently place in pan
Do not over-crowd
Don’t touch them for 2 minutes, then gently lift one to check cooked side
If golden, then flip
When both sides are golden, take out and place on wire rack over paper towels to drain
Serve while warm
Use your favorite dipping sauce

Lebanon PA, 1.18.2021: PA Dutch Corn Fritters in Jo Ellen's Kitchen
Kum Esse (Come Eat.)
INGREDIENTS:
3 cups corn oil
1 cup flour
1 teaspoon baking powder
½ teaspoon salt
2 ¼ teaspoons sugar
1 egg
½ cup milk
1 tablespoon melted butter or margarine
1 can whole corn, drained

DIRECTIONS:
Heat oil while mixing batter.
Pour flour, baking powder, salt, sugar, and egg into a bowl. Mix with a fork.
Add milk and melted butter. Stir. Add corn. Tumble gently until coated.
Tablespoon batter into hot oil. Cook on one side until all fritters float.
Flip over, and cook until light brown. Place a paper towel onto a plate. Remove corn fritters from oil to drain on towel and plate.
Eat plain, or drizzle with honey.
Yields 24 corn fritters. Alternatively, spray Pam into muffin tins, spoon in corn fritter batter, and bake at 325 degrees for 20-25 minutes until golden brown.
PA DUTCH CORNMEAL MUSH -- CAST IRON WEDNESDAY
This humble, simple dish hails back to colonial days but has kept families going through hard times for many years, such as the Depression. An oldie, but a goodie! I love it with maple syrup, but brown sugar and cinnamon, sausage gravy or brown gravy or bacon gravy are popular, also.
Corn Meal Mush for Frying --To make one loaf for frying
3 C corn meal
3 qt water
1/2 C flour
Seasoning as desired
Mix the corn meal, flour and 1 qt water together to make a slurry/batter.
Add to the other 2 qts at a boil.
Stir in well and bring all to a boil, and then drop to a simmer for a minimum of 1 hr, but longer is better to ensure it's tender.
After cooked and thickened, pour into a loaf pan and chill a couple of hours.
Take out of loaf pan and slice.
Fry up in hot pan until crispy.
Serve with maple syrup, gravy, etc.
If you just want it as porridge, don't add the flour.

Ingredients:
3 cups chicken or vegetable broth
¾ cup cold water
1 cup cornmeal
Salt, to season
Cooking spray
2 tbsps unsalted butter, melted
To Serve:
maple syrup, or sausage gravy, apple butter, tomato gravy
⬇️ How to make Amish Cornmeal Mush ⬇️
0:11 Grease an 8-inch loaf tin with cooking spray and set aside.
0:14 In a soup pot or deep skillet, bring the chicken broth to a boil.
0:22 While waiting, combine the cold water and cornmeal in a mixing bowl until it forms a paste.
0:35 Once the broth boils, add the cornmeal paste and mix to combine.
0:42 Reduce to low heat, and simmer the cornmeal for roughly 20 minutes, stirring frequently. The cornmeal is cooked once there is no grainy taste.
0:45 Once the cornmeal is cooked, season with salt, then mix to combine.
0:54 Transfer to a greased loaf tin, cover, then store in a chilled area until set (preferably overnight).
1:07 Once the cornmeal is set, remove it from the loaf tin. Cut the cornmeal into thin slices.
1:32 Heat up melted butter in a skillet, then fry the mush until crispy and golden brown on both sides.
1:57 Serve with any of the following sauces: maple syrup, sausage gravy, apple butter, or tomato gravy. Enjoy!

MEXICAN CORN FRITTERS--Cast Iron Wednesday
These fun festive Mexican Corn Fritters are just a different take on everyone's favorite Mexican Street Corn! The lime comes through in a refreshing way countering the corn's sweetness! Add the dipping sauce for a bit more zing! Bring the street food home and share at picnics and BBQ's! Quick and easy! MEXICAN CORN FRITTERS
INGREDIENTS
2 cups Fresh Corn Kernels
½ cup Cilantro chopped
1 Lime zest and Juice
1 Egg
3 tablespoon Mayonnaise
2 teaspoon Chili Powder or Tajin
⅓ cup Cotija Cheese or Parmesan Cheese
⅓ cup All Purpose Flour
1 teaspoon Salt
¼ teaspoon Pepper
1 teaspoon Baking Powder
2 tablespoon Oil for frying
Dipping Sauce:
3 tablespoon Sour Cream
2 teaspoon Lime Juice
2 teaspoon Hot Sauce or to taste
INSTRUCTIONS
In a large mixing bowl, combine the corn, cilantro, lime juice and zest, egg, mayo, chili powder, cotija cheese.
Stir just until combined.
Next add the flour, salt, pepper, and baking powder.
Stir to combine.
Heat 1 tablespoon of oil in a large skillet over medium heat.
Once hot, add ¼ cup of the corn mixture to the skillet, then flatten the top slightly to form a round circle that is about ½ inch thick.
Allow the corn fritter to cook for about 2 minutes, or until the underside is golden brown, then flip and cook for an additional 2 minutes on the other side. (tip - Use a thin spatula, such as a fish spatula, to flip the corn fritters. If they are falling apart when you try to flip them, then they aren't quite ready to flip.)
Repeat with the remaining corn mixture, adding additional oil to the pan as needed.
Serve immediately with optional dipping sauce.
For Sauce:
Combine all ingredients for the sauce together in a small bowl. Serve with the corn cakes if desired
