How to Make Hush Puppies

Got a hungry crew? Everyone will love these fried balls of cornmeal dough.
Step 1: Preheat oil
Pour oil into the deep fryer and heat to 350 degrees Fahrenheit.
Tip
The oil is ready when a small bit of batter dropped in the oil sizzles and floats to the top.
Step 2: Mix dry ingredients
Mix the cornmeal with the flour, baking powder, baking soda, and pepper in a large mixing bowl.
Step 3: Combine other ingredients
Whisk together eggs, buttermilk, and vegetable oil in a separate bowl.
Step 4: Combine mixtures
Add the egg mixture to the dry ingredients, slowly, stirring until the batter is well blended. It should be stiff but free of lumps.
Tip
If the batter is too dry, add more buttermilk. If it's too thin, add cornmeal.
Step 5: Drop batter into the oil
Use two tablespoons to form a round lump of batter. Gently drop the batter into the oil. Cook in batches of six or seven.
Tip
If the batter sticks to the spoons, spray them lightly with a non-stick cooking spray.
Step 6: Turn hushpuppies
Fry the hush puppies for about five minutes or until they are golden brown. Turn occasionally to brown them evenly.
Step 7: Remove from fryer and drain
Remove the golden brown hushpuppies from the oil and allow them to drain on paper towels. Serve them warm, and enjoy the silence while everyone digs in!

Here is the recipe:
Ingredients Serves 4
1 cup yellow cornmeal
3⁄4 cup self-rising flour
1 tsp salt
1⁄2 tsp sugar
1⁄2 tsp cayenne pepper
1⁄2 small sweet onion, finely chopped
1⁄2 jalapeno pepper, finely chopped
4 green onion, sliced thin
1 large egg, beaten
1⁄4 cup cheddar cheese, grated
1/2 cup corn (drained)
1 cup buttermilk
1 orange dipping sauce, recipe follows
1⁄4 cup dijon mustard
1⁄4 cup honey
1⁄4 cup orange marmalade
Directions
Preheat deep fryer to 375 degrees F.
Mix all the ingredients together into a large mixing bowl to form a thick batter.
Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce.

Crispy Golden Hush Puppies
Deep fried to perfection.
INGREDIENTS:
1/2 Cup Flour
1/2 Cup Cornmeal
1/2 Tbsp Sugar
1/4 tsp Baking Soda
1/4 tsp Baking Powder
Salt
Pepper
Cajun
1/4 Cup Milk
1/4 Tbsp White Vinegar
1 Tbsp Vegetable Oil
1 Egg
Onion
Garlic
Cooking Oil
HOW TO COOK:
1. Whisk together flour, cornmeal, sugar, baking soda, baking powder, salt, pepper, and cajun.
2. In another bowl add milk, vinegar, vegetable oil, and egg.
3. Finely grate onion and garlic, then add to wet ingredients and whisk.
4. Add dry ingredients to wet and mix.
5. Heat oil to 350°F then add batter for 3-5 minutes.

RECIPE
1 BOX OR 1 1/2 CUPS JIFFY CORNBREAD MIX
2/3 CUP SELF RISING FLOUR
1 EGG (BEATEN)
(1/2 CUP CANNED CORN - BLEND IN MAGIC BULLET WITH 1/3 CUP OF BUTTERMILK) OR
1/2 CUP CREAM OF CORN
1 1/2 TBSPNS SWEET ONION (FINELY CHOPPED)
1 GREEN ONION (SLICE THINLY)
2 TBSPNS JALEPINO PEPPER (FINELY CHOPPED)
1/3 CUP BUTTERMILK
OIL FOR DEEP FRYING
DIRECTIONS
IN A MIXING BOWL, ADD THE DRY INGREDIENTS AND MIX WITH A WHISK TO WELL COMBINE.
ADD THE BEATEN EGG, CREAM OF CORN, ONION, GREEN ONION, PEPPERS, BUTTERMILK AND MIX TO WELL COMBINE INTO A THICK BATTER.
HEAT OIL TO 350º
SPOON DROP THE BATTER INTO HOT OIL UNTIL GOLDEN BROWN FOR APPROXIMATELY 2-3 MINUTES.
P.S.
SPOON DROP ABOUT 3 AT A TIME BECAUSE THEY MAY GET BROWN REALLY QUICK AND YOU DON’T WANT TO OVER BROWN.
