1 c. sugar 1/2 c. shortening (butter or margarine work too) 1 egg 1 c. persimmon pulp mixed with 1 t. baking soda 1/2 t. each cinnamon, nutmeg, and allspice 1 c. chopped dates or raisins 1 c. chopped nuts (walnuts are good) 1-3/4 to 2 c. flour (depending on how soft you want the cookies) 1 t. baking powder 1/2 t. salt Cream shortening and sugar; add egg and mix well. Add persimmon pulp (it will be gelatinous with the soda mixed in) and dry ingredients. Fold together. Add dates and nuts last. Drop onto greased cookie sheet from spoon. Bake at 350 F for about 10 to 12 minutes--until they are as you like them.

This little recipe is a grandma recipe found on a scrap of paper. Since persimmons seem to be a seasonal fruit, we thought this would be perfect for the holidays. Our biggest discovery... you could probably substitute applesauce or pumpkin puree for the persimmon pulp and get the same result.

Persimmon Cookies 1 cup persimmon pulp (about 3 fruits) 1 cup sugar 1/2 cup shortening 1 egg 1 cup raisins 1 cup walnuts 1 cup chopped dates 2 cups flour 1 tsp baking soda 1/2 tsp each cinnamon, cloves, nutmeg dash of salt
Cream sugar and shortening. Add pulp and eggs. Stir in raisin, nuts, dates. Mix dry ingredients and mix into creamed mixture. Drop onto cookie sheet with teaspoons or a cookie scoop. bake in a preheated oven at 350F for 15-20 minutes.

How to Make Persimmon Cookies
Its a bit of tradition around the holidays for some to make fall cookies like Persimmon Cookies. Because you can only get persimmons for a short time during the year, usually only for about 2 months, and then the season is over.
What you will need: Preheat Oven to 350 2 to 3 Ripe Persimmons Peeled and Pureed 2 Cups All Purpose Flour 1 Tsp Baking Soda 1/2 Tsp Salt 1/4 Tsp Ground Cinnamon !/2 Tsp Ground Cloves 1/2 Tsp Ground Nutmeg 1 Egg 1 Cup Granulated Sugar 1/2 Cup softened Unsalted Butter 1 Cup Chopped Walnuts 1 Cup Raisins
Peel Persimmons and puree in food processor. Add the Baking Soda to the Persimmons, mix and set aside.
In your bowl, blend together the sugar and butter until fluffy. Beat in the Egg and the Persimmons. Now mix in the dry ingredients until creamy. Drop by rounded tsp onto foiled lined cookie sheet
Cook each set for 15 minutes at 350 Let cool
