How to Make Delicious Persimmon Cookies
It rained last night and today the sky is cloudy and the ground still wet.
The weather condition made me a bet feeling lazy to go out walking or even going out to the gym. So I thought of making some delicious cookies out from our persimmon fruits.
The ingredients for my persimmon cookies are as follows:
3 pieces of persimmon fruits: midsize and crunchy meat; not over ripe.
Wet Ingredients: 2 cups of monk fruit sweetener, 1/2 cup of coconut sugar, 1 cup butter: Ads; I Can't Believe It's Not Butter, 1 tbsp vanilla, and 3 whole eggs at room temperature.
Dry Ingredients: 3 cups gluten free flour, 1 tsp salt, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp nutmeg powder, 1/2 tsp cinnamon powder, and 1/4 cup ground flax seeds.
Optional Ingredients: 1 cup semi-sweet baking chocolate chips, 1 cup chopped walnuts, and 1 cup Quaker Oat Meal.
And the baking process went this way.
Step #1: Wash clean, peel, and chop the 3 pieces of persimmon fruits into small pieces, blend lightly into pulp like texture, and set aside.
Step #2: Beat 2 cups of monk fruit sweetener, 1/2 cup coconut sugar, 1 cup can’t believe it’s butter, 1 tbsp vanilla and 3 whole eggs, ensure it's mixed very well.
Step #3: Mix all of the dry ingredients: 3 cups gluten free flour, 1 tsp salt, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp nutmeg powder, 1/2 tsp cinnamon powder and 1/4 cup ground flax seeds, slowly combine into the cream butter and mix.
Step #4: Mix the persimmon pulps, 1 cup semi-sweet baking chocolate chips and 1 cup chopped walnuts, mix everything with the dough, and stir it well.
Step # 5: Optional: mix 1 cup Quaker Oat Meal into the dough. Stir good.
Step #6: Drop by spoonful about 1 1/2 inch apart on cookie sheet, Warm the oven to 350 degrees and bake for 30 minutes.
The recipe and procedure outlined above would result into 50 to 60 pieces of delicious persimmon cookies.
