1/4 c Butter
1 c Brown sugar
** cake 1 1/4 c Flour; sifted
2/3 c Sugar
2 ts Baking powder
1/2 ts Salt
1/4 ts Ground mace
1/3 c Butter
1/2 c Milk
1 ts Vanilla extract
1 Egg
Recipe by: FWDS07A Pat Dwigans Preheat oven to 350. Drain the pineapple well in a sieve, discard liquid; spray the sides and bottom of a 9 inch square pan with veg spray, and melt the butter in the pan in the preheated oven. Add the brown sugar to the butter and blend. spread the drained pineapple evenly over the sugar mixture, but do not mix. Set aside. Mix flour, sugar, baking powder, salt and mace. Add the softened butter, milk and vanilla. Beat on low speed for 1 1/2 minutes, then add the egg and beat 1 1/2 minutes longer. Spread the batter evenly over the pineapple with a
rubber spatula--the batter will be quite thick. Bake for 35-40 minutes or until a skewer inserted into the middle of the cake comes out clean. remove from oven loosen edges with knife and invert immediately onto a platter. Let cool -----

Ingredients:
Pineapples - chopped to fill bottom of the bowl
Jaggery or Brown Sugar - 2 tblspn
All Purpose Flour / Maida - 3 tblspn
Sugar - 1 tblspn
Curd / Yogurt - 1 tblspn
Butter - 1.5 tblspn melted
Pineapple Juice - 1 tblspn
Vanilla Essence - 1/2 tsp
Baking Soda - a pinch
Method:
Grease a microwave safe bowl with some butter. I used a 250 ml capacity ramekin.
Take chopped pineapples and jaggery in a bowl and mix well. Lay this on the bottom of the bowl and microwave it for 1 min. Remove it and set aside.
Now make the batter, take curd, sugar and vanilla in a bowl and mix well.
Add in butter, pineapple juice and mix well. Add in flour and baking soda and mix well.
Pour this over the pineapples and pop it in microwave and cook it for 2 mins.
Remove it and cool for 5 mins.
Invert it and serve with a scoop of icecream.

Sugar - ¼ cup or 32g
Baking soda - ⅓ tsp
Baking Powder - 1 tsp
Butter - 57g
Condensed Milk - 160g
Milk - ½ cup

Pineapple Upside Down Cake, made easy!!
This beautiful cake was absolutely amazingly delicious!! Simple recipe
Ingredients:
Pineapple topping:
1/4 -1/2 brown sugar
3 tbsps melted Butter
20oz can pineapple slices
8-12 maraschino cherries (pat dry)
Yellow Cake:
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup Butter
3/4 cup Sugar
2 Eggs
1 tsp Vanilla Extract or Essence
1/4 cup pineapple juice (from can)
1/4 cup milk
Bake into a 350 degree preheated oven for about 35-40 minutes or until toothpick comes out clean.
Allow to cool for at-least 10 minutes before flipping.
