How To make Piquant Salmon Rolls

cream cheese

walnuts, chopped

chives, fresh, chopped

celery, stalk, chopped

teaspoon
lemon, juice

cayenne pepper, pinches

teaspoon
coriander, ground

salmon, smoked, thin slices
8
each
bread, whole-wheat, thin slices
1
butter
8
each
cucumber, thin slices
1
pepper, freshly ground
1
dill, sprigs, fresh, (optional)
1
chives, fresh, (optional)
Directions:
In a bowl, soften cream cheese and stir in walnuts, chives and celery. Add 2 teaspoons of lemon juice and spices and mix well. Spread cream cheese mixture on each slice of salmon and season with pepper. Roll up to form neat rolls.
Toast slices of bread and cut 8 (2.5 inch) rounds, using a biscuit cutter. Spread thinly with butter. Place a cucumber slice on each bread round and place a salmon roll on top of each cucumber. Drizzle with remaining lemon juice and garnish with dill sprigs and chives, if desired.
NOTE: Salmon rolls can be prepared several hours in advance and refrigerated. Toast bases, however, are better freshly made. Once assembled, serve within 30 minutes.

Poke bowl au Gorgonzola AOP piquant, edamame, saumon mariné, radis et germes
INGRÉDIENTS POUR 4 PERSONNES
320 g de riz à sushi
1 cuillère à café et demie de vinaigre de riz
250 g de Gorgonzola piquant
250 g d’edamame
4 radis
200 g de saumon sans arête
Germes
1 oignon nouveau (partie verte seulement)
Sauce de soja
1 cuillère à café de miel
Sésame blanc
1 piment rouge frais
Sel
Poivre
Préparer d’abord le riz. Rincer le riz sous l'eau courante jusqu’à ce que l'eau soit claire. Le mettre dans une casserole et le recouvrir d’eau froide. Faire cuire pendant 12 minutes sans jamais enlever le couvercle. Retirer du feu, y verser le vinaigre précédemment chauffé avec une pincée de sel puis mélanger à la cuillère en bois. Mettre de côté.
Dans un saladier, mariner le saumon coupé en dés avec 3 cuillères à soupe de sauce de soja, 1 cuillère à café de miel, le piment frais haché, la partie verte de l’oignon nouveau hachée, le sésame et un tour de moulin à poivre.
Couper le Gorgonzola piquant en dés et mettre de côté.
Commencer à composer le poke bowl. Mettre le riz dans un bol et l'aplatir légèrement, poser dessus les autres ingrédients en les séparant les uns des autres, pour finir assaisonner le tout d’un fil de sauce de soja.
