Pollo asado is one of my all time favorite foods to eat. As a matter of fact I don’t know ANYONE who doesn’t love a perfectly cooked pollo asado. And in this video we’re gonna show you how most restaurants cook it and my favorite way to cook it in the backyard. We’re gonna spatchcock two birds – one with and one without the backbone and we’re also going to split one bird in half, which is the traditional Texas style pollo asado.
Now here’s a pro tip – the secret to perfect cooking is fire control, especially in open fire cooking. And the second pro tip – always use a meat thermometer for perfect, juicy chicken. Don’t listen to the keyboard haters that say they don’t need a meat thermometer for perfect cooking, the reason they’re typing is because they’re still chewing their overcooked dried out chicken! As long as you have a good recipe, good cooking technique and fire, your family and friends will love your barbecue. Now let’s get fired up and grill some pollo asado.

Ingredients

Chicken Marinade
6 ounces pineapple juice
2 tablespoons lime juice
1 tablespoon white vinegar
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon dried oregano, crumbled
1/8 teaspoon ground pepper
1/4 teaspoon mild chili pepper, remove stem and seeds from chilies, finely minced (Anaheim or California)
8 drops yellow food coloring (optional)
1 tablespoon vegetable oil
4 lbs frying chicken, cut up
Chicken Flavor before Cooking
Chili Pepper or powder to taste (sprinkle over chicken)
Salt to taste (sprinkle over chicken)

Ingredients:
Thighs and Legs of Chicken
Orange Juice
Turmeric Powder
Cumin Powder
Pepper
Salt
Calamansi juice
Cooking oil
Anato seed powder
Marinate the thigh, and legs of the chicken with orange juice, turmeric powder, cumin powder, black pepper, salt, calamansi juice, and rub well the ingredients into the chicken. Leave it on the fridge overnight. Grill the chicken using a Vinchef grilling pan on the induction stove. Skin down first, and brush the chicken with cooking oil that has anato seed powder. Let the chicken cook for 15 minutes on each side until it's fully cooked/grilled. And serve it with love to your family! Enjoy!

Pollo Asado Mariposa – Mexican Spatchcock Chicken
4 oz Anchiote Paste
1 bunch of cilantro
3 roma tomatoes
½ onion
2-3 garlic cloves
2 serrano chiles
1 tsp dried oregano
½ cup white distilled vinegar
2 limes
2 - 3 tsp salt
2 whole chickens (butchered spatchcock)
Add all of your marinade ingredients and blend well in a blender. Take your chicken and apply the marinade inside the skin and outside. Coat well and rub in, you want the chicken to be covered in the marinade.
Let the chicken marinate for at least 4 hours, I like to let it sit for at least 24 hours.
Pollo Asado is traditionally grilled over Mesquite charcoal. Even though I smoke this starting off with lower temperatures and increased to have it done in less then 2 hours. You can cook this many ways, hot and fast or low and slow.
What ever method you choose, just ensure the internal temp is 165 degrees in the breast. That is the thicken part of the chicken and you want it really close to 165. You do not want a dry chicken breast, its best to check it and check it often that way you end right at 165 degrees.
Once done, cut into sections and serve with rice, beans, tortillas and salsa. Oh yeah, don’t forget the lemon!
