How To make Potato Spice Cake
2 c Sifted all-purpose flour
1 1/2 c Sugar
1/2 c Cocoa
3 ts Baking powder
3/4 ts Salt
1/4 ts Each cloves,nutmeg,cinnamon
And allspice 3/4 c Shortening
1/2 c Milk
1 c Cold mashed potatoes
3 Eggs
1 1/2 ts Vanilla
1/4 ts Lemon extract
1/2 c Raisins
1/2 c Nuts
Sift together flour, sugar, cocoa, baking powder, salt and spices. Cut shortening into flour mixture till fine as cornmeal. Add all at once milk, pototoes, unbeaten eggs and flavoring. Beat till smooth. Beat in nuts and raisins. Pour into a large well-greased angel cake pan. Bake at 350F for 70 minutes or till done. Cool about 10 minutes. Remove from pan. Probably the last in the cake mixes series.
1 package yellow cake mix (2 layer size)
1/2 cup chopped pecans
1 tsp ground cinnamon (I used 2 tsp)
1/4 tsp ground nutmeg (1 used 1/2 tsp)
3 eggs
1 can (18oz) vacuum-packed sweet potatoes or 2 medium sweet potatoes, cooked and mashed ( 1 3/4 cups)
Mix all above ingredients in a large bowl, pour into a greased 9x13 baking dish and bake at 350F 30 minutes or until toothpick inserted into the center comes out clean. Cool completely.
Browned butter icing:
1/3 cup butter
3 cups powdered sugar
1 1/2 tsp vanilla
1-2 tbsp milk
Heat butter in a saucepan over medium heat until just light brown. Watch carefully because butter can brown then burn quickly. Remove saucepan from heat.
Stir in powdered sugar, vanilla and 1 tbsp milk. Stir.
Continue adding small amounts of milk until smooth and spreadable. Immediately spread over cake.

Method:
1. Add boiled milk and sugar to a bowl and mix well.
2. After the sugar dissolves, add melted ghee. (Butter can be used instead of ghee)
3. Mix it well and let it come to room temperature.
4. To another bowl, add maida, rava, baking powder, baking soda, fennel seeds, cardamom powder, cinnamon powder and mix everything together.
5. Now add the milk mixture to the dry flour mixture mix everything till there are no lumps.
6. Grease the cake tin with butter and place a butter paper at the bottom.
7. Pour the cake mixture into the tin and garnish it with sliced almonds or any nits of your choice.
8. Pre-heat the oven at 180 Degrees Celsius for 15 mins and then place cake tin in the oven.
9. Bake the cake for 1 Hour at 160 degrees celsius.
10. Check if the cake is fully cooked by poking it with a skewer or tooth pick.
11. After the cake is cooled down, remove from the tin and cut it into slices.
12. The lovely Indian Spice cake is ready to be served.
