2 c Unsifted all-purpose flour
2/3 c Sugar
1 t Baking powder
1 t Baking soda
1/2 ts Salt
-Pinch of ground cloves -(optional) 2 c Fresh or frozen blueberries
1/4 c (1/2 stick) butter or
-margarine 1 8-ounce container plain
-low-fat yogurt 1 lg Egg
2 ts Grated lemon rind
1 t Lemon extract
1 t Vanilla extract
1. Heat oven to 375-F. Grease twelve 3-inch muffin-pan
cups. In large bowl, combine flour, sugar, baking powder, baking soda, and salt; add cloves, if desired. Add blueberries and toss to coat with flour mixture; set aside. 2. In medium-size microwave-safe howl, microwave
butter on medium (50 percent), 10 to 15 seconds, or until melted. Cool slightly, then add yogurt, egg, lemon rind, and lemon and vanilla extracts; beat until blended. 3. Stir yogurt mixture into flour-berry mixture just
until blended and dry ingredients are moistened- do not overmix. Divide batter among muffin-pan cups. Bake 20 to 25 minutes or until muffins spring back when
gently pressed with fingertip. Cool in pan on wire rack 5 minutes. Remove muffins from cups and serve warm. ALMOND BARS
1 pkg. yellow cake mix
1/3 c. margarine
1 c. ground or finely chopped almonds
1 c. icing (powdered) sugar
1 1/2 tsp. almond extract
4 egg whites
1/2 c. slivered or sliced almonds
Heat oven to 350 degrees. Grease a 13 x 9 inch pan. In large bowl, combine cake mix and margarine at low speed until crumbly. Keep 1/2 cup crumbs for topping. Press remaining crumbs in bottom of prepared pan. In same large bowl, beat ground almonds, powdered sugar, almond extract and egg whites on highest speed for 4 minutes. Pour evenly over crumbs. Combine 1/2 cup reserved crumbs and almonds; sprinkle over egg white mixture. Bake for 20 to 30 minutes or until light golden brown. Cool. Cut into bars.

This is my amazing CHRISTMAS BREAD PUDDING, it is always a hit at my house on Christmas day, definitely a winner. I make it with my day old home dinner rolls, but just about any bread will do. I always serve it with my delicious creamy sauce that makes it totally complete, you will want seconds for sure. One of the best things about this dessert is that it is made with ingredients most people have at home, like butter, eggs, milk or heavy cream and a variety of other ingredients. you can add raisins and blueberries like I do or you can substitute your own or leave the fruit out if you wish. It is an old fashioned recipe, but definitely a goodie. ❤
INGREDIENTS----------------
ABOUT 10 C. torn day old dinner rolls (or your choice of bread)
3 beaten eggs
1 1/4 C. sugar
2 1/2 Tbsp light brown sugar
1/2 tsp ground cinnamon
1/4 C. melted butter
1 1/2 C. heavy cream
1 1/2 C. whole milk
1/2 C. raisins
1/2 C. fresh blueberries
SAUCE_____________________
1/2 C. light brown sugar
2 tsp. All purpose flour
pinch of cinnamon
1 egg
2 1/2 Tbsp melted butter
1 C. whole milk
1/3 C. heavy cream
pinch salt
1 Tbsp vanilla extract
● You can use all milk or all heavy cream if you want.
● YOU CAN USE 2% MILK IF YOU WANT
● You can use your fruit of choice or leave out fruit if you want.

Pumpkin Pie
Yield: 2 Pies
796mL Pure Pumpkin
4 eggs
2 Cups brown sugar (packed)
1/2 tsp ginger
1/2 tsp cinnamon
1/2 tsp salt
1 1/2 Cups 10% half and half cream
Instructions:
1. Combine all ingredients in a bowl and thoroughly mix.
2. Ladle pumpkin custard mixture evenly between two pie shells.
3. Bake at 425°F for 15 minutes. Then lower temperature to 350°F for 30-35 minutes or until a sharp knife comes out clean in the middle.

Pumpkin Spice Oat Waffles
Yield: 12 waffles
Dry ingredients:
1 1/2 Cups all purpose flour
1 Cup rolled oats or oat flour
1/4 Cup brown sugar
2 tsp pumpkin spice
1 Tbsp baking powder
1/2 tsp salt
Liquid ingredients:
3 eggs
1 3/4 Cups 10% milk or milk of choice
1 1/2 Cup pumpkin purée
1/3 Cup olive oil
2 tsp vanilla
Directions:
1. Heat waffle iron.
2. Combined dry ingredients.
3. Combine liquid ingredients.
4. Pour liquid ingredients into dry ingredients. Thoroughly combine.
5. Use a ladle to place in waffle iron. Cook for time recommend in your waffle iron manual. Approximately 6 minutes or until golden brown.

Apple Pie
6 Cups Apples
3/4 Cups white sugar
3/4 tsp apple pie spice
1/4 tsp salt
1 Tbsp butter
1 Tbsp lemon juice
(Egg for egg wash if desired)
1. Peal and slice apples.
2. Sprinkle sugar, spices and salt over apples and stir. Let sit for five minutes.
3. Pour into uncooked pie shell. Cut butter into thin slices and place in various places over the pie.
4. Sprinkle lemon juice evenly over the pie.
5. Place the top of the pie shell on the pie. Secure the edges. Add an egg wash if desired. And sprinkle on a small amount of sugar on the top of the pie.
6. Bake at 425°F for 15 minutes. Then lower the temperature to 350° and bake until bubbles form in your pie. This may take about 45 additional minutes.
*you can substitute the apple pie spice with 1/2 tsp of cinnamon and a 1/4 tsp of all spice if needed

Day 3 - Honey Whole Wheat Bread (Easy Homemade Bread for Beginners)
Honey Whole Wheat Bread Recipe
Ingredients:
3 cups whole wheat flour
1/3 cup honey (sub. 1/4 c. sugar and 1 T. apple juice)
1/4 cup canola oil or olive oil
1/2 Tbsp salt
4 1/2 tsp regular or quick active dry yeast
2 1/4 cups very warm water
3 to 4 cups all purpose or bread flour or whole wheat flour
Butter, melted if desired
Directions:
1. Mix whole wheat flour, honey, oil, salt and yeast in large bowl.
2. Add warm water.
3. Mix in water slowly.
4. Stir in enough all-purpose flour, 1 cup at a time, to make dough easy to handle.
5. Place dough on lightly floured surface. Knead about 10 minutes or until dough is smooth and springy.
6. Place dough in large bowl greased bowl (I spray with avocado oil, turning dough to grease all sides.
7. Cover bowl loosely with a tea towel and let rise in warm place 40 to 60 minutes or until doubled in size.
8. Grease bottoms and sides of 2 loaf pans with oil.
9. Divide dough in half and then cut each in half again and form into four ball shapes.
10. Place two dough balls into each loaf (9.5 inch x 5 inch) pan.
11. Place seam side down in pan.
12. Cover loosely with a tea towel and let rise in warm place 35 to 50 minutes or until double.
13. Bake for 30 minutes at 375 degrees
14. Remove from pans to wire rack.
15. Brush loaves with butter.

Roasted Potato Poutine
5-6 large potatoes (red are my preference)
1/4 Cup of olive oil or unsalted butter
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
1 Cup gravy
One cup cheese curds
Instructions:
1. Wash and dry potatoes. Chop into bite-size pieces.
2. Distribute butter or oil evenly over the potatoes. Sprinkle: salt, pepper and onion powder over potatoes on parchment paper lined baking tray. Stir until incorporated.
3. Bake in convection oven at 425°F for about 20-25 minutes until nice and brown.
4. Remove from oven add gravy and cheese curds. Return to oven for approximately five minutes until cheese is slightly melted.
5. Serve right away when warm! Enjoy!
