6 Eggs
slightly beaten
1 c Sugar
1/2 c Butter or margarine
1/3 c Lemon juice :
fresh
2 ts Lemon peel grated
1 Pie crust (9 inch) :
baked
3 c Blueberries -- fresh
1/3 c Sugar
1/4 c Orange juice
1 tb Cornstarch
Recipe by: Sue Klapper In a saucepan, combine eggs, sugar, butter, lemon juice and peel; cook, stirring constantly, over medium-low heat until mixture thickens, about 20 minutes. Cool for 20 minutes, stirring occasionally. Pour into pie shell. In a saucepan, toss blueberries and sugar. Mix orange juice and cornstarch; add to blueberries. Cook over medium heat until mixture comes to a boil, about 8 minutes, stirring gently. Cook 2 minutes longer. Cool for 15 minutes, stirring occasionally. Spoon over lemon layer. Chill for 4 - 6 hours. Source: Taste of Home Magazine: June/July 1995.

1/2 tsp of baking powder
1/3 tsp of salt
1/2 cup of melted vegan butter/margarine/coconut oil
2 tbsp of sugar
1/4 cup of water
Cream:
Juice from 2 lemons
Lemon zest
1/2 cup of sugar
400ml coconut milk
1 vanilla pudding or 4 tbsp of cornstarch plus a pinch of turmeric
1/2 cup of frozen or fresh blueberries

Lemon Blueberry Dessert -- Cool Dessert For Hot Summer Days
Lemon Blueberry Dessert
• 3 cups graham cracker crumbs
• 3/4 cup butter, melted
• 2 - 8 oz. pkg. cream cheese, room temperature
• 1 cup sugar
• 1/3 cup lemon juice
• 1 cup 2% milk
• 3.4 oz. box instant lemon pudding
• 21 oz. can blueberry pie filling
• 16 oz. tubs frozen whipped topping, thawed
Instructions
1. Mix graham cracker crumbs with butter. Set aside 1/2 cup for optional topping. Press crumbs in bottom of a 13 x 9 dish, and let crust set up in the frig while you work on the next layer.
2. In a large bowl, thoroughly mix cream cheese and sugar until light and fluffy. Add the lemon juice and milk, mix thoroughly. Add dry pudding last and just until thoroughly mixed. Batter will be thick. Drop by dollops onto the crust and spread gently into an even layer.
3. Drop pie filling on top of lemon layer by spoonfuls to reduce having to spread it. Gently spread into an even layer.
4. Top with frozen whipped topping layer and optional reserved graham cracker crumbs.
5. Allow dessert to set up in refrigerator for at least 2 hours. Keep refrigerated and enjoy!

A winner at the table ????, a delicious sweet cream custard pie with a crunch. Perfect summer dessert.
- philo dough (1 roll)
- 1 stick of butter (120g)
- 5 eggs
- 2 cups of heavy whipping cream
- 2/3 cup of sugar
- the zest of 2 lemons ????
- 10 drops of orange extract
- 150g of fresh blueberries (that’s about a cup)
- powdered sugar for decoration
- when prepping the philodough put one sheet down, brush it with melted butter and cover with a second philo sheet. Then fold it with a crumple technique and roll it. Repeat with two more sheets etc… until the pan is filled.
Oven at 350 degrees Fahrenheit .
The first bake is only 15 minutes.
The second bake with all the filling is for 30 to 35 minutes or until a nice golden brown color.
