How To make Pumpkin Spice Bread
Nonstick cooking spray 1 1/4 c Unbleached white; or
Whole-wheat pastry flour Plus more to prepare pan 1 1/2 ts Ground cinnamon
1/2 ts Ground nutmeg
1 ts Pumpkin pie spice
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/2 c Chopped pitted dates
1/2 c Old-fashioned rolled oats
-or low-fat Granola or shredded bran -cereal 3/4 c Low-fat buttermilk
1/4 c Canola oil
1 lg Egg
1/3 c Real maple syrup
1/2 c Pumpkin puree
1/4 c Raisins; plump 10 minutes in
Hot water to cover, then -drain Recipe by: St. Louis Post-Dispatch 10/14/96 Preheat oven to 400 degrees. Coat 1 1/2-quart loaf pan with cooking spray; lightly dust with flour. Shake out excess flour. Combine 1 1/4 cups flour, cinnamon, nutmeg, pumpkin pie spice, baking powder, baking soda and salt in large bowl. Add dates and oats; toss to coat. Whisk together buttermilk, oil, egg, maple syrup and pumpkin puree in separate bowl. Stir in drained raisins. Combine wet and dry ingredients, folding until just incorporated. Spoon batter into prepared pan. Bake for 25 minutes. Reduce oven temperature to 300 degrees and bake until wooden pick inserted into center comes out clean, 15 minutes -----

Ingredients for the Classic Bread:
INGREDIENTS
BREAD:
1/2 cup granulated sugar
1/4 cup brown sugar
1/3 cup vegetable oil
1 cup LIBBY'S® 100% Pumpkin Puree
2 large eggs
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 teaspoon baking soda
1/3 cup buttermilk
2 cups all-purpose flour
TOPPING:
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
INSTRUCTIONS
Preheat oven to 350°F. Spray a 9×5-inch or 8×4-inch loaf pan with cooking spray.
Stir granulated sugar and brown sugar with oil and pumpkin. Stir in the eggs, pumpkin pie spice, salt, and baking soda. Stir until combined. Stir in buttermilk and flour.
Pour batter into prepared pan. Combine cinnamon and sugar for topping; sprinkle over bread.
Bake for 40-50 minutes. If you want it totally done (no gooey center), test it by inserting a toothpick just partway into the top center of the bread. If this comes out clean, it’s done. If you like a gooier center, remove it when testing it with at toothpick that way comes out with a little stuck to the top.
Cool before removing from pan. Store in an airtight container for up to 2 days or freeze for up to one month.

This moist homemade pumpkin bread recipe is super moist and sure to impress. This easy recipe is perfect for the fall. Add walnuts, raisins, pumpkin seeds or my maple bourbon icing.
Pumpkin bread recipe
2 cups of flour
1 1/2 cups of sugar
1 cup of pumpkin purée
1 tsp of baking powder
Pinch of salt
1 tsp of pumpkin spice
1 tsp of ground cinnamon
1/4 tsp of nutmeg
1/4 tsp of ground cloves
2 tsp of fresh ginger
1/2 cup of butter or canola oil
1/2 cup of water
2 eggs
1 tsp baking soda
Maple bourbon icing
1 cup of confectioners sugar
1 tsp of vanilla extract
3 tbsp of coconut milk or heavy cream
1 tbsp of maple bourbon sugar
