Homemade Mini Quiche + 3 Delicious Flavors!
This Mini Quiche Recipe has endless flavor options and is way better than store-bought! Mini muffin tins are lined with a flaky pie crust then filled with fluffy eggs and mix-ins including meats, cheeses, vegetables, and herbs. These bite-sized appetizers are the best make-ahead snack for easy holiday party hosting!

My Fabulous Salmon Quiche Recipe | Rosemary Shrager
In this video i show you how to make a beautiful salmon quiche. the video only lasts just over 6 minutes.
Salmon Quiche
Serves: 6-8
Pan Size: 1 x 20cm x 3cm flan ring
Ingredients
For the Pastry:
240g plain flour
120g cold butter, cut into small cubes
2 eggs
1 tablespoon water
For the Filling:
Tarragon leaves
450g salmon fillet
4 whole eggs
3 egg yolks
400ml double cream
Salt and pepper, to taste
Pinch of cayenne pepper
Method
For the Pastry:
- Place the flour in a food processor, and add the cold, cubed butter.
- Process until the mixture resembles breadcrumbs.
- Add the eggs and water, and process again until a dough forms. You may need to add a little more water if the dough doesn't come together.
Note: This pastry does not need to be blind baked.
Roll out the dough on a floured surface, ensuring there's enough flour to prevent sticking.
Line a buttered flan tin with the dough, and then place it back in the fridge while you prepare the filling.
For the Filling:
- Preheat the oven and bake the salmon, covered, for 10 minutes. Allow to rest for an additional 10 minutes.
- In a large bowl, whisk together the whole eggs and egg yolks. Season with salt, pepper, and a pinch of cayenne.
- Fold in the double cream.
- Place the cooked salmon in the base of the pastry-lined flan tin.
- Sprinkle with tarragon leaves.
- Pour the egg mixture over the top.
Baking:
- Bake in the oven for approximately 45 minutes.
- After 30 minutes, reduce the heat to 150°C. It may need a little longer in the oven; the quiche should be nice and fluffy when done.
Serving Suggestion: Serve with a green salad.

Quiche can be an intimidating dish, but if you take it step-by-step, it's really not so difficult after all. This recipe includes a homemade pie crust topped with a flawlessly delicious ham and cheese quiche filling.
If you're nervous about making it for the first time, don't worry! This video is heavy-loaded with TONS of tips for rolling out pie crust, getting the most decadent, flavorful, and luxurious quiche filling possible, and even side dish serving suggestions to round out your meal perfectly!
It's very similar to the classic, Quiche Lorraine. You'll love it!
HAM AND CHEDDAR QUICHE RECIPE:
Ingredients
Pie Crust (see below if making your own pie crust)
Tbsp Olive Oil
Tbsp Unsalted Butter
½ lb Country Ham diced
¼ c Green Onions sliced
Tbsp Italian Flat Leafed Parsley minced
4 Eggs
½ c Half and Half
¼ c Crème Fraiche
Kosher Salt and Black Pepper
1 c Cheddar Cheese freshly grated
Instructions
Preheat oven to 400°F. Roll out pastry dough to reach 12” in diameter. Gently lay the dough in quiche or pie dish, fold over and crimp edges. Place dish in the freezer for at least 30 minutes. Remove from the freezer and cover with nonstick aluminum foil, and pour over pie weights or dried beans to cover. Blind bake for 20 minutes. Allow to cool. Makes 6-8 Servings
Lower oven temperature to 375°. Heat butter and olive oil in a sauté pan over medium-high heat. Add diced ham and cook until browned and caramelized in color, about 5-8 minutes. Add green onions and cook for another 1-2 minutes until barely softened. Remove from heat and stir in parsley to wilt.
Whisk together eggs, half and half and crème fraiche. Place fine-mesh sieve over mixing bowl, and whisk until all the custard has filtered through. Season with a pinch of salt and ½ tsp of black pepper. Evenly layer ham mixture over the partially baked pie shell and sprinkle over cheddar cheese. Pour custard over ingredients and bake at 375° for 25 minutes, or until quiche is puffed and cooked through.
FOR THE CRUST:
Ingredients
8 tablespoons cold unsalted butter, cut into tiny cubes
8 tablespoons cold shortening cut into tiny cubes
2 ¾ cups all-purpose flour
1 teaspoon fine sea salt
2 tablespoon granulated sugar (omit for savory dishes)
2/3 cup of ice-cold water
Instructions
Place butter and shortening cubes in the freezer temporarily to harden.
Add flour, granulated sugar (if using) and the salt to a large mixing bowl and whisk.
Add the butter and shortening cubes and use a pastry blender, a fork, or two knives to incorporate it into the dry mixture. Stop once the fats are worked in and resemble pea-sized clumps.
Drizzle the water across the dough and stir until evenly distributed. Continue to stir until the dough comes together. You may also use your hands to knead it all together gently, if necessary.
Form the dough into a ball and transfer it to a floured work surface. Cut the dough ball in half using a knife or a pastry cutter. Form into two flattened round disks, wrap in plastic wrap and place in the refrigerator until chilled through, at least 2 hours.

The Coronation Quiche recipe is very unusual in that along with spinach and cheddar, the recipe includes broad (fava) beans. Unusual perhaps, but the flavour is actually very nice, especially when you use fresh tarragon. King Charles III and Camila, Queen Consort recently announced that Coronation Quiche is the official signature dish for the Coronation.

INGREDIENTS (from Mark Flanagan recipe)
Pastry
125g plain flour
Pinch of salt
25g cold butter, diced
25g lard
2 tablespoons milk
Or, if buying, 1 x 250g block of ready-made shortcrust pastry
Filling
125ml milk
175ml double cream
2 medium eggs
1 tablespoon chopped fresh tarragon,
Salt and pepper
100g grated cheddar cheese,
180g cooked spinach, lightly chopped
60g cooked broad (fava) beans or soya beans
