How To make Quick Wheat Bread
1 1/2 c Whole wheat flour
1 c White flour
1/2 c Oat meal(quick cooking)
1/4 c Brown sugar
1 tb Orange peel finely shredded
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Lite salt or less
1 3/4 c Buttermilk(low fat)
1 ea Egg white
1/8 c Sunflower seeds
1 tb Wheat germ
1 ts Honey
1 tb Sunflower seeds for garnish
Baked in a round casserole dish and garnished on the top with sunflower seeds, this bread is a winner! Preheat the oven to 350. In a large bowl combine flours, oatmeal, brown sugar, orange peel, baking powder, baking soda and light salt until well blended. Add milk and egg white; stir only until ingredients are moistened. Fold in the sunflower seeds. Lightly oil a 1 1/2 Qt. casserole dish; sprinkle lightly with wheat germ. Pour batter into prepared dish. Bake for 50-60 minutes or until wooden pick inserted in center
of bread comes out clean. If necessary, cover loaf with foil during the last 15 minutes of baking to prevent overbrowning. Cool in casserole for 10 minutes; turn bread onto wire rack. Brush top of loaf with 1 teaspoon of honey and sprinkle with additional 1 tablespoon of sunflower seeds, if desired. Serve

I have noticed there is difference in the properties of whole wheat flour/wholemeal flour for different brands
So the amount of water to be added will be slightly differ and the kneading time to achieve good gluten strength will also vary.
And if our dough is not showing enough gluten strength ,our bread will not rise well and so it will be denser in texture than regular white bread.

Yield: 1 loaf (9x5 inch or 8.5x4.5 inch loaf pan)
240 g | 1 cup water
45 g | 3 Tbsp milk *almond/soy/cashew
30 g | 2 Tbsp oil *olive/grapeseed/canola
40 g | 2 Tbsp liquid sweetener (add more if desired) *vegan: agave syrup or pure maple syrup; vegetarian: pure honey
10 g | 1 Tbsp instant yeast
480 g | 4 cups whole wheat flour
8 g | 1 tsp salt

Ingredients:
1 tsp activated yeast ≈ 5 grams
2 tsp sugar ≈ 10 grams
1 tsp salt ≈ 5 grams
1 ½ cups of water (110°F) ≈ 355 milliliters
3 cups of whole wheat flour (approximate values)
Whole wheat flour: Approximately 360-375 grams
Instructions:
In a mixing bowl, combine the activated yeast, sugar, salt, and water. Allow the mixture to sit for 5 minutes to activate the yeast.
Add 3 cups of whole wheat flour to the bowl. Mix until all the flour is incorporated and no dry patches remain.
Cover the bowl with a cloth and let the dough rest for 1 hour, allowing it to rise.
Fold in all sides of the dough to release any excess air and enhance the structure.
Proof the dough for an additional 1-2 hours, allowing it to rise and develop flavor.
Preheat the Dutch oven to 450°F (230°C).
Carefully transfer the dough into the preheated Dutch oven, ensuring it is evenly shaped.
Cover the Dutch oven with the lid and bake the bread for 35 minutes.
Remove the lid and continue baking for an additional 3 to 5 minutes to achieve a golden crust.
Once baked, remove the bread from the Dutch oven and let it cool before slicing.
