How To make Raspberry Marzipan Coffee Cake
Ingredients

flour, all-purpose

cup
sugar
1/4
cup
margarine or butter, softened

milk

teaspoon
baking powder
1
teaspoon
vanilla
1/2
teaspoon
salt

each
egg
1
pk
almond paste, finely chopped (3-1/2 ounces)
1
cup
unsweetened frozen (thawed) OR fresh raspberries
StrEUSEL:
1/4
cup
margarine or butter, firm
1/3
cup
flour
1/4
cup
sugar
1/3
cup
slivered almonds
Directions:
Heat oven to 350 degrees. Prepare Streusel. Grease 9x9x2 inch square pan.
Beat all ingredients except almond paste, raspberries and streusel in medium bowl on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Spread half of the batter in pan. Sprinkle with half each of the almond paste, raspberries and Streusel. Repeat layers.
Bake about 50 minutes or until wooden pick inserted in center comes out clean.
Note: If using self-rising flour, omit baking powder and salt.
StrEUSEL: Cut margarine into flour and sugar until crumbly. Stir in nuts.

1/2tsp Vanilla Extract
Pink Food Colouring
For the Marzipan
150g Ground Almonds
180g Icing Sugar
1/2 tsp Almond Extract
30g Pasteurised Egg White
Plus Apricot Jam

Apple cake with marzipan
i promise, this is the last Danish cake I do. Here's an alternative to the traditional apple pie, with the marzipan contain less flour but definitely more sugar, so perfect with a good bleak coffee. Try it and as usual, let me know.

Almond Coffee Cake
This is the coffee cake that my mom used to make around the holidays. Simple but so good, it uses a sweet, yeast dough and can be filled with just about anything. This version is filled with almond, but poppy seed, apricot and prune are also great fillings for this classic coffee cake.
Cherry Almond Snack Cake with Marzipan Crumb Recipe
A “snack cake is, as you might expect, a cake for snacking. It consists of one layer and is, more often than not, baked in an 8×8-inch square pan. Snack cakes are perfect after school cakes, or teatime cakes. They are wonderful in the morning — for breakfast or brunch — or when you need a pick-me-up with a cup of coffee around 11 a.m. And I’m partial to a slice in the evening when I am staying up way too late binge watching Netflix (buy maybe that's just me).
Snack cakes are also hassle-free cakes — cakes that call for ingredients already in your pantry (or for those found easily at the nearest store) and that come together quickly in your kitchen. And this particular snack cake is a “one-bowl” cake, which means you only need to dirty one mixing bowl (in this case the bowl of your stand mixer) to make it. I love one-bowl baking, almost as much as I love snack cakes, as I am a sucker for recipes with streamlined instructions that do not require that you pull out every bowl, plate and ramekin when assembling. One-bowl cakes are always easy to make and when you turn back to your kitchen sink after placing said cake in the oven there is just one dirty bowl waiting for you.
