Southern Apple Cake
Hey y'all! Yesterday Ella and I made this delicious southern apple cake that I just had to share with you guys! It took a while to cook but it was so very worth it! It came out perfectly moist! The apples work very well with the other components of the recipe, and I was surprised because I thought they would take over. Here are the ingredients you need if you want to make this yourself:
For the Cake-
- 2 cups sugar
- 4 large eggs
- 1 cup vegetable oil
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 cups thinly sliced apple
- 1 cup chopped pecans or walnuts
For the Caramel Topping
- 1/2 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 4 tablespoons butter
- 1/4 cup evaporated milk
- 1 teaspoon vanilla extract

INGREDIENTS:
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon (optional)
2 large eggs
1/3 cup honey
4 tablespoons coconut oil
130 gram, 5 Oz (1/2 cup) greek yogurt
2 teaspoon pure vanilla extract
2 medium apples
1/2 cup chopped pecans
INSTRUCTIONS:
1. Grate the apples. Chop the pecans; set aside.
2. Preheat the oven to 340°F (170°C), and grease with oil a 9 inch loaf pan.
3. In a small bowl, combine whole wheat flour, baking soda, baking powder, cinnamon and kosher salt. Mix and set aside.
4. In a large bowl, add 2 eggs and whisk. Add honey, coconut oil, greek yogurt and pure vanilla extract. Whisk.
5. Add the dry ingredients and mix until well combined.
6. Add the grated apples and the chopped pecans to the batter. Mix gently.
7. Pour the batter on the loaf pan.
8. Bake for 40-50 minutes or until a tester inserted into the center comes out clean.
9. Let it cool in the pan for at least 20 minutes. Slice and serve. Enjoy :)
COMMENTS/ UPGRADES:
* You can use all purposed flour instead of whole wheat flour.
* You can place walnuts instead of pecans.

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!

I cracked open grandma Jeans recipe box again today to make her Fresh Apple Cake. This has become my favorite fall cake, right up there with Mamaw's apple stack cake. Ingredients:
3 cups AP flour
1 1/2 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon allspice
1 teaspoon nutmeg
1 1/4 cup oil
2 cups sugar
2 eggs
1 cup chopped walnuts or whatever you like
1 cup coconut
2 teaspoons vanilla
3-4 medium sized apples diced (3 cups)
In medium size bowl mix together flour, soda, cinnamon, salt, allspice and nutmeg and set aside.
now in a large bowl mix the oil and sugar together till sugar begins to dissolve, then add eggs and mix to incorporate.
Add half the flour mixture to the wet mixture and stir in well. Add remaining flour mixture and mix to incorporate.
Add in the walnuts, coconut, vanilla and apples. stir well to mix all ingredients.
Pour in a prepared Bundt pan and bake at 325°F preheated oven for 60-65 minutes.
Let cool before cutting.
