Shepherd's Pie - Recipe & Collab with Africa Everyday
Shepherd's pie is a firm favourite on the UK menu and is super delicious and comforting. I'm going to make a version of this dish today.

Here's an outline of the ingredients I used:
For the meat layer:
600g mutton or lamb chops
1 large onion
1 clove of garlic
half a cup of plain flour
butter or oil for frying
about a teaspoonful each of fresh or dried thyme, and ground cumin
Stock/bouillon cube
2 or 3 anchovy fillets
handful of dried mushrooms (porcini and others), rehydrated in 1 cup of water
about two handfuls of fresh mushrooms
2 pickled walnuts (or substitute a splash of brown sauce, worcestershire sauce, Branston Pickle, etc)
For the stock pot:
Bones from the mutton chops
Trimmings from all the vegetables (except the potato peels - those tend to just make stock cloudy and less tasty)
Bay leaves, rosemary, sage, thyme
1 clove of garlic, smashed
1 stick of celery, crushed
pinch of salt
1 litre of water
For the potato layer:
1kg potatoes
4 or 5 spring onions/scallions
75g salted butter
half a cup of milk
half a teaspoon of white pepper
1 tablespoon melted butter for brushing
For the extra gravy
1 tablespoon butter
1 tablespoon flour
1 or 2 cups of stock from the stockpot
any pan deglaze from frying the meat
1 teaspoon mint sauce (which is just mint leaves finely chopped in vinegar and sugar

Ingredients:
For the meat mixture:
2 pounds (1kg) ground lamb
1 large onion, chopped
3 garlic cloves, crushed
3 tbsp olive oil
4 tbsp (30) flour
1/2 tsp salt
1/2 black pepper
1 tsp rosemary
1 tsp thyme
1 tbsp tomato paste
2 cups beef broth
7oz (200g) carrots
7oz (200g) peas (fresh or frozen)
For the puree:
3.5 pounds (1.5kg) potatoes
1 tbsp butter
1/2 cup (120ml) milk
1/4 cup (25g) cheddar cheese
1/2 tsp salt
1/2 black pepper
egg yolk
Directions:
1. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender.
2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes.
3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir.
4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens.
5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth.
6. Preheat oven to 400F (200C).
7. Layer the meat mixture in a 13X8.5 (33X22cm) ovenproof dish. Spread the puree over the meat mixture.
8. Bake 20-25 minutes. or until mashed potato is golden brown.

POT PIES WITH RED BEANS, RICE AND SAUSAGE - Leftover Red Bean Recipe
This pot pie recipe is so easy and a perfect dish idea for your left over pinto beans and rice. Ramekin-filled puff pastry, filled with bacon and onion pinto beans, rice and andouille sausage and topped with more puff pastry with a sprinkle of cajun seasoning then baked in the oven until crusty and golden brown. It’s a perfect dish for a cold weather day and a way to make use of left-over beans. Enjoy!
Shopping List:
Leftover red beans and rice
(Servings: 2. Use 2, 4 inch ramekin bowls)
2 Puff pastry sheets
1 raw beaten egg with a tbls. of cold water
Vegetable spray
Andouille sausage
Sprinkle of your favorite seasoning
Directions:
Pre-heat oven to 400
You'll need a 4 inch ramekin and a bowl just a bit larger.
Thaw the puff pastry per package instructions then cut out dough rounds using the larger bowl.
Press one dough round into the ramekin, pressing against the bottom and sides.
Fill the ramekin with the beans, rice and andouille sausage.
Cut a second dough round and top the filled ramekin, crimping the edges.
Sprinkle with your favorite seasoning blend.
Bake at 400 for 20-25 minutes.
Let cool about 5 minute then serve.

We Love This So Much! Chinese Style Cottage Pie Recipe | Not Shepherds Pie
We love cottage pie and Shepherds pie. It's such an easy dish to make and so so delish. This time round, instead of making the traditional cottage pie, we decided to add a Chinese twist to it, hence it's called Fusion Style Cottage Pie. Fusion Style Cottage Pie
Ingredients:
Serves 5 - 8 pax

Grounded beef

150g [5.29oz] chopped red onion
800g [28.2oz] grounded beef
1.5 tablespoon spicy broad bean paste (辣豆瓣酱)
1 tablespoon oyster sauce
0.5 teaspoon grounded Sichuan pepper - dry roast Sichuan peppercorns and pound them finely
2 tablespoons plain flour (all-purpose flour)
200ml [6.76fl oz] water (add more later if your beef looks dry)
0.5 teaspoon salt
Mashed potatoes

1kg [35.27oz] potatoes
40g [1.41oz] unsalted butter
1.5 teaspoons salt or to taste
1 teaspoon grounded black pepper
2 slices cheddar cheese
Cook the beef and potatoes first over the stove. Then assemble the dish in an oven-proof pot and bake it for about 15 mins at 220C (428F). Remember to preheat your oven before the actual baking.
