How To make Rigatoni Alla Fontina
1 lb Rigatoni 3 tb Salt
6 tb Butter, sweet 1/2 lb Sliced fontina cheese
2 pn Nutmeg 1 c Parmigiano cheese
2 pn Black pepper
eheat oven to 400 degrees. Cook the rigatoni in 5 to 6 quarts salted boiling water until extra al dante (they will finish cooking in the oven). Drain well and place in a large bowl. Add 2/3 of the butter, 1/2 of the parmigiano, and nutmeg and mix well until all the pasta is coated. In a buttered baking dish, make a layer of the pasta, a layer of the fontina cheese, sprinkle with the parmigiano, and repeat the process until the pasta is used up, ending with a layer of the fontina on top. Sprinkle with parmigiano and black pepper and dot with the remaining butter. Bake for 15 minutes, or until the cheese is melted. May be served on flat plates. -----

My Vegetable Pasta Bake is a veggie packed dinner that even the meat-eaters will devour - this vegetable pasta bake is tasty, filling comfort food.

Ingredients:
400 g (14 oz) dried pasta shapes (I used rigatoni)
1 tbsp vegetable oil
1 large red onion peeled and chopped into wedges
1 red bell pepper de-seeded and chopped into large chunks
1 yellow bell pepper de-seeded and chopped into large chunks
1 courgette (zucchini) chopped
pinch of salt and pepper
2 cloves garlic peeled and minced
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
2x 400 g (14 oz) tinned chopped tomatoes
120 ml (1/2 cup) double (heavy) cream
100 g (3 packed cups) fresh baby spinach
100 g (1 packed cup) strong cheddar cheese grated
100 g (1 packed cup) mozzarella grated
Small bunch parsley roughly torn

Rigatoni with Four Cheese Sauce
Ingredients:
1lb Rigatoni Pasta
2cups whipping cream
4oz Fontina
4oz Gorgonzola Cheese, Danish Blue will work if you can’t find Gorgonzola
4Tbsp Parmesan and Romano blended together
Salt and white pepper to taste
Preparation:
Boil Rigatoni in salted water as per instructions
Warm cream and add Fontina and Gorgonzola and heat just enough to melt cheese
Turn fire to low and add freshly cooked pasta to cream and cheese sauce and mix in well.
Sprinkle in half of the grated cheese until blended in and salt and pepper to taste.
Finish off by sprinkling more of the parmesan blend on top and put in oven to brown under the broiler. It won’t take long to brown, so keep an eye it!!!!!!

Here's another recipe of mine that you need to try, here I used the Rigatoni Pasta but you can also use other short pasta, like penne.
For the dough, I used Pasta Brisè. Here's the recipe:
200 gr Flour
125 gr Butter
1/2 glass cold water
a pinch of salt
Mix flour, salt and butter in a food processore or by hand, for some minutes then add the water, knead until all the ingredients are combined, place in the ref for an hour before using.
