How To make Rosemary Flat Bread
1 tb Dry yeast
1 tb Sugar
1 c Warm water
2 1/2 c White flour
1 ts Salt
1 ts Canola oil
Nonstick cooking spray 2 tb Margarine
1/4 c Fresh rosemary; chopped
-(or 2 tbsps dried) Recipe by: Shape May 1995
Place yeast, sugar and water in a large bowl or food processor and allow the mixture to become bubbly. Mix in 2 c of flour and salt. Knead for about 10 min or process in food processor for 15 sec until smooth and elastic; add flour if necessary. Oil a bowl, put dough in it and cover with a towel. Let dough rise in a warm place for 1 hr, until doubled. Punch down dough and divide in half. Let the dough rest for a few minutes. Coat 2 9-in square cake pans with nonstick spray. Press dough into pans. Melt margarine. Brush margarine over the tops of the loaves. Sprinkle rosemary over the loaves and lightly press into the surface. Let the loaves rise again until doubled, about 45 min. Preheat oven to 450 F. Lightly sprinkle salt over the loaves. Bake for 20 - 25 min, until lightly browned. Per serving (1/8 loaf): 92 Calories; 2g Fat (19% calories from fat); 2g Protein; 16g Carbohydrate; 0mg Cholesterol; 151mg Sodium

■ Process|Room Temperature : 26℃
1. Put water in the bowl.
2. Add instant dry yeast and mix well.
3. After adding salt, dissolve in water.
4. Add extra virgin olive oil.
5. After adding the strong flour,
Mix evenly until no flour is visible (dough temperature 25℃).
6. After 1 hour and 30 minutes of resting (fermentation), the first fold (folding)
7. After 1 hour of rest (fermentation), sprinkle olive oil on the inside of the glass bowl containing the dough.
(To make the dough come off the glass ball well)
8. Apply olive oil to the Teflon sheet and spread the dough on it.
9. Shaping the dough after 30 minutes of rest (fermentation)
10. Parmesan Cheese (Parmigiano Reggiano) Topping
11. Fresh Rosemary Topping
12. Put the dough in the Rofco oven preheated to 250℃
13. Lower the temperature to 200℃ and bake for 15 to 18 minutes

Make fresh bread for dinner in 30 minutes. You can do this!
Rosemary and Red Onion Flat Bread
Serves 6
2 and ¼ teaspoons active dry yeast (about 1 package)
1 cup hot water (not boiling)
1 and ½ teaspoons honey or granulated sugar
2 and ½ cups all-purpose flour or whole white wheat (plus a little more for dusting)
¾ teaspoon kosher salt
2 Tablespoons extra virgin olive oil
non-stick spray
Topping
1 small red onion, sliced thin
2 Tablespoons chopped rosemary
1 Tablespoon olive oil
2 Tablespoons shredded parmesan
INSTRUCTIONS
In a medium bowl, mix yeast, sugar (or honey) and water and allow to sit for 5 minutes
Add flour, olive oil, salt; stir to combine
When dough starts to come together, finish mixing with hand to incorporate all of the flour into the dough
Allow the dough to rest for 5 minutes
Preheat the oven to 425 degrees F (220 degrees C)
Spray a pizza stone with non-stick spray
Press the dough out into desired shape - dusting the top with flour if it is too sticky
Brush 1 Tablespoon of olive oil over the dough and top with red onion, rosemary, and parmesan
Bake for 15 minutes or until the sides are golden brown
