How To make Rotel Potatoes
1 cn (10 oz) diced Rotel
-tomatoes, with liquid 2 3 large potatoes
OPTIONAL:
Eggbeaters equivalent of 4 eggs 2-3 oz. lowfat or nonfat cheese
4-6 tortillas
Microwave or boil the potatoes until they are half-cooked; the flesh should still be firm, and not crumbly. Let them cool until you can comfortable handle them, and cut into bite-sized pieces. In a large skillet, dump the can of Rotel tomatoes and most of the juice, then add potatoes. Cook over medium heat, stirring occasionally, until most of the tomato liquid has been absorbed by the potatoes (this takes anywhere from 10 to 30 minutes, and is usually dependant on how hungry you are). Optional: If you want to add eggs at this point, make a crater in the center of the pan and add eggs. Stir the eggs over medium heat until eggs are scrambled. When they are just about done, mix thoroughly with the potato mixture. Serve with cheese (optional), either alone, or wrapped in steamed tortillas. With the eggs and cheese, this make a simple, spicy, and very filling breakfast. Other ideas I have yet to try: Stir in spinach, zucchini, mushrooms, and or onions with the potatoes. Rotel Cheese Dip Three Ways
This week we continue making tail gate goodies. This dip is a family fav around our house, any of these three ways!
1. Rotel Cheese Dip
2lb Block of Velveeta Cheese
2 cans Rotel Tomatos and Chiles (one mild, one original)
Melt cheese and rotel together, stir till combined and serve with your fav chips. We prefer corn chips.
2. Rotel Taco Cheese Dip
2lb Block of Velveeta Cheese
2 cans Rotel Tomatos and Chiles (one mild, one original)
1 lb of ground beef browned and drained (or sausage if you prefer)
1 pack of Taco seasoning
Melt cheese and rotel together, stir till combined. Brown the ground beef and add the taco seasoning as per the package. Mix the browned seasoned meat with the rotel cheese dip and serve.
3. Taco Potatoes
Rotel Cheese Dip (with or without the meat)
Baked Potatoes
1 lb ground beef
1 pkg taco seasoning
Bake your potatoes, brown the ground beef and season with taco seasoning. Once the potatoes are baked, cut open and top the potato with ground beef mixture and rotel dip. Serve

Today I am going to show you one of my husband's favorite recipes from when he lived in South England. Jacket potatoes are roasted or baked potatoes made with a variety of toppings. Today I am going to make homemade turkey chili to top these fluffy tender baked potatoes.

INGREDIENTS
4 large russet potatoes
olive oil
butter
sour cream
salt and pepper to taste
TURKEY CHILI INGREDIENTS
2 lbs ground turkey of beef
1 Tbsp dehydrated onion
2 1/2 to 3 Tbsp light chili powder
1 1/2 to 2 tsp granulated garlic powder
1 1/2 to 2 tsp ground cumin
1 1/2 to 2 tsp smoked paprika
1 1/2 tsp salt
1 tsp cracked black pepper
2 1/2 cups of beef broth
1/4 cup instant corn flour
15 oz can charro pinto beans (drained)

This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste

✅Ingredients
• 1 pound thick cut bacon, diced
• 1 medium yellow onion, diced
• 2 tablespoons butter
• 4 cloves minced garlic
• ⅓ cup all purpose flour
• 4 cups low sodium chicken broth
• 2 cups milk
• 2 pounds yukon gold potatoes, diced
• 3 ribs celery, diced
• 1 cup sour cream
• 1 tablespoon fresh minced tarragon, or 1 teaspoon dried
• 1 teaspoon salt, or to taste
• ½ teaspoon white pepper
• ½ cup shredded cheddar cheese, optional
• 1 tablespoon minced chives, optional
✅Instructions
1️⃣ Heat a large soup pot over medium heat. Add in diced bacon and cook until crispy, stirring occasionally. Use a slotted spoon to remove crispy bacon and transfer to a paper towel lined plate and set aside. Remove excess bacon grease from skillet, leaving just 1 tablespoon of grease in the pot.
2️⃣ Return pot to medium-high heat. Add in onion and saute 7 minutes, until soft and translucent. Add in butter and garlic and stir until butter is melted. Stir in flour and cook an additional 2-3 minutes.
3️⃣ Slowly pour in chicken broth and milk. Add in celery and potato and bring to a simmer. Reduce the heat to medium-low and continue simmering until potatoes are soft and tender, about 15 minutes.
4️⃣ Once potatoes are tender, stir in sour cream and tarragon. Season with salt and pepper to taste.
5️⃣ Serve hot topped with cooked bacon, chives, and an additional dollop of sour cream.
