How To make S'Mores Cake
2/3 c Cake flour
2 1/2 c Graham cracker crumbs
2 ts Baking powder
1 c Non-fat milk
1/2 c Applesauce
1 ts Vanilla
3 Egg whites
1/4 ts Cream of tartar
1/2 c Sugar
2 c Miniature marshmallows
1/4 c Mini-chocolate chips *
* If you wish to reduce the fat even further, you may leave these out. Lightly butter 2 - 8" round springform cake pans r spray with non- stick cooking spray. Stir together cake flour, graham cracker crumbs and baking powder in medium bowl. In another bowl, combine nonat milk, applesauce, and vanilla. Add to dry ingredients, stirring just until blended. Beat eggs whites until frothy. Add cram of tartar and continue beating until thick and foamy. Gradually add sugar, beating until soft, smooth peaks form. Fold half into batter until blended. Fold in remaining whites until blended. Divide batter into prepared pans, spreading evenly. Bake at 350^ 15-20 minutes or until wood pick inserted in center comes out clean. Sprinkle marshmallows (you may use MORE than directed as they are fat-free) and chocolate chips over tops of cakes. Place under broiler to brown slightly. Let cool to warm and serve. Makes 2 cakes, about 16 servings. Nutritional Analysis: 136 calories, 169 mg. sodium; 1 mg. cholesterol; 2 grams fat; 28 grams carbohydrates; 3 grams protein; 0.20 gram fiber.

Graham Cracker Crust:
- 100g graham cracker (crushed into crumbs)
- 60g unsalted butter, melted
Chocolate Cake:
- 210g AP flour
- 75g cocoa powder
- 12g baking soda
- 4g baking powder
- 6g salt
- 350g granulated sugar
- 2 eggs
- 240g strong coffee, cooled
- 240g milk (or buttermilk)
- 215g vegetable oil
Bake at 350F for 12-14 minutes.

How to make S’mores Cake (with Toasted Marshmallow)
This S'mores cake is three tender layers of graham cracker cake, filled with toasted marshmallow buttercream, graham cracker crumble, and chocolate ganache. It gives you that traditional S'mores flavor combo that will bring you straight back to summer campfire memories.
EASY BUTTERCREAM RECIPE ►
TOASTED MARSHMALLOW BUTTERCREAM ►
13 oz (369 g) marshmallow fluff (broiled)
1 batch (6 cups) of easy buttercream or any buttercream of your choice.
*Make sure to use a scale to weigh your ingredients and bring all of the wet ingredients to about 70 degrees Fahrenheit. Baking is science and requires precision!

7 oz (198 g) all-purpose flour
7 oz (198 g) finely crushed Graham crackers
12 oz (340 g) granulated sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
6 oz (170 g) unsalted butter (room temperature/a little warm)
2 large eggs (room temperature/a little warm)
3 large egg yolks (room temperature/a little warm)
8 oz (227 g) whole milk (room temperature/a little warm)
2 oz (57 g) vegetable oil
1 Tbsp vanilla extract
GANACHE ►
12 oz (340 g) Hershey's milk chocolate chips
4 oz (113 g) heavy cream
GRAHAM CRACKER CRUMBLE ►
8 oz (227 g) crushed graham crackers
4 oz (113 g) melted butter

Toasted marshmallows, chocolate and a moist cinnamon cake, what's not to love about a s'mores cake??! This tender graham cracker cake is filled with a marshmallowy fluff, covered in chocolate buttercream, drizzled with dark chocolate throughout, and skirted with an addictive, crunchy graham cracker crumble. It’s a MUST make cake!!! I've baked this cake a few times and it's a total crowd pleaser. And yes, I think it makes a perfect birthday cake in case you're wondering.
What's my favorite part? I love the crunch from the Graham cracker crumble and the solidified chocolate in this cake, it contrasts well with the gooey marshmallow fluff! THis cake is SO YUMMY I really hope you ger a chance to make it soon.

S'mores Cookie Cups | Preppy Kitchen
These decadent s'mores cookie cups are a must bake treat for all dessert lovers! A cinnamon-flavored cookie base made with graham crackers filled with creamy chocolate ganache, topped with toasted homemade marshmallow fluff makes for a delicious treat from scratch!
Would you say this is closer to a cupcake than a cookie???
The marshmallow fluff is actually a vegeratian version that uses corn syrup to transform meringue into that gooey treat we all love!
For those of you who haven't tried making them, cookie cups are super easy and SO versatile! Use any filling imaginable for a panoply of flavors! Apple pie, butterscotch, salted caramel even lemon curd!

How Do You Make Cookie Cups?
To make cookie cups you add cookie dough to a muffin tin, bake until done then use a cylindrical tool like a shot glass or tablespoon to create a well, which you then fill with something delicious! You can make all sorts of fillings and go wild with the flavor combinations. What you you make??
