Sticky Toffee Pudding Recipe
Ingredients:
1 ½ cups pitted dates
1 ½ cups water
½ cup butter
1 cup brown sugar
3 eggs
2 cups all purpose flour
1 tsp baking powder
½ tsp baking soda
Toffee Sauce:
1 cup whipping cream
1 cup brown sugar
1/2 cup butter
Combine the dates and water into a medium-sized saucepan. Bring to a boil and simmer gently for 10 minutes or until most of the liquid has been absorbed. Puree the dates in a blender or food processor, set aside.
With an electric mixer, beat the butter and brown sugar. Beat in the eggs.
Mix the flour, baking powder and baking soda. Add to the wet ingredients. Add in the pureed dates.
Spoon the batter into a greased and parchment paper lined 9x13 pyrex dish or two 9 inch cake pans. Bake in a 350 degree oven for 30-45 minutes for a 9x13 pyrex dish or 25-30 minutes for the cake pans. The cake is done when the top feels firm when gently pressed in the center.
Make the toffee sauce by combining the whipping cream, brown sugar and butter in a heavy-bottom saucepan. Bring to a boil then cook for about 3 minutes while constantly stirring. Let cool slightly.
When ready to serve, slice cake and pour toffee sauce on top. Serve warm.
Enjoy!
