How To make Shredded Chicken Salad with Cilantro
3 lb Whole chicken breasts
Salt 1/4 c Light vegetable oil
2 c Chopped Vidalia onions
3/4 c Walnuts, lightly toasted
1/4 c Finely chopped scallions
3/4 c Finely chopped cilantro
1 1/3 c Homemade mayonnaise
You may use commercial mayo Fresh ground black peppe Place the chicken breasts in a saucepan with enough water to cover. Bring to a boil, add 1/2 teaspoon salt, reduce the heat, and simmer until the chicken is cooked through, about 15 minutes. Drain the chicken and allow to cool. Remove and discard the skin. Remove the chicken from the bones and tear the meat into shreds. Place in a salad bowl and set aside. Heat the oil in a medium-size skillet over medium-high heat. Saute the onions, stirring, until deep golden brown, about 20 minutes. Drain the onions and add them to the chicken. Cool to room temperature. Add the walnuts, scallions, and cilantro to the chicken. Toss with the mayonnaise and season with salt and pepper. Serve the salad at room temperature.

4 Thai chilies, sliced
To boil chicken:
7 quart of water
4 ginger, sliced
1 tbsp salt

Cilantro Lime Chicken Salad with Catalina Dressing
Ingredients
3 large boneless skinless chicken breasts--- butterflies
Marinade
1 cup loosely packed cilantro
2 teaspoons minced garlic-- or 4 garlic cloves , peeled
3 tablespoons Lime juice
2 tablespoons olive oil
1 teaspoon each---- chili powder, ground cumin, onion powder
1/2 teaspoon each---- paprika, sugar, salt, pepper
Catalina Dressing
1/4 cup ketchup
1/4 cup red wine vinegar
2 tablespoons sugar
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon reserved Cilantro Lime Marinade
Spring Mix lettuce-- enough for your crew
1 cup cherry tomatoes-- cut in half
1 red or yellow or orange pepper julienned
1 cup drained and rinsed black beans
1 cup cooked corn
tortilla chips or strips
Directions
Marinade
Add all Marinade ingredients to food processor
Pulse until finely chopped
Reserve 2 tablespoons (1 tablespoon for Catalina dressing--1 tablespoon for basting)
Place chicken in freezer bag and add Marinade. Shake and rub until chicken is coated
Place in fridge and marinate for 2-10 hours
When ready to cook let chicken sit at room temperature for 30 minutes.
Dressing
Whisk all dressing ingredients together in medium bowl
Place in refrigerator for at least 30 minutes
Grease and Preheat grill to medium heat
Remove chicken from marinate and pat off excess Marinade.
Place on grill
Grill for 6-8 minutes undisturbed
Flip chicken and continue to cook until cooked through.
Remove chicken to cutting board and baste with reserved 1 tablespoon of Marinade
Let chicken rest for a few minutes before slicing
Place Salad Ingredients in bowl and toss together.
Drizzle individual servings with desired amount of dressing
Add chicken to salad and serve

Southwest Chicken Salad ~ Spicy pan grilled chicken tops a salad with a homemade Cilantro Lime Dressing.
Ingredient List:
2 chicken breasts - boneless, skinless
taco seasoning mix- 1 pkg or homemade
1/4 cup vegetable oil
1/4 cup water
1/4 cup lemon juice
2-3 cups romaine lettuce for each salad
2 roma tomatoes- diced for each salad
3 tablespoons corn- drained for each salad
3 tablespoons black beans drained and rinsed for each salad
2 tablespoons green onions chopped
Prepare chicken and salad according to the video and dress with the Cilantro Lime Dressing.
