How To make Southwestern Beef Hash
1 lb Lean Ground Beef
1 sm Onion
chopped
3 c Frozen Potatoes Obrien
1/2 ts Salt
1/4 ts Pepper
1 c Salsa
Sliced Green Onions :
Optional Sliced Black Olives -- Optional Brown ground beef and onion in large skillet over medium heat until no lnger pink. Drain. Stir in potatoes, salt, and pepper. Increase heat to medium-high and cook 5 minutes, stirring occasionally. Stir in salsa. Cook 8 to 10 minutes more until potatoes are lightly browned, stirring occasionally. Southwestern Hash And Steak Omelette Recipe Details
Adjust Seasoning According To The Amount And Desired Preference
5 potatoes cubed russet / Yukon gold
oil
black pepper to taste
onion powder to taste
adobo to taste
cajun seasoning to taste
poultry seasoning (McCormick's Chicken Montreal Seasoning)
1 tsp paprika
1/2 tsp smoked paprika
1/2 -1 tsp chicken bouillon
cayenne pepper
1/4 - 1/2 of each bell peppers
1/4 cup onions diced
3 garlic cloves chopped
cheddar cheese
mozzarella cheese blend
parsley dried or fresh
4 eggs
steak thinly shaved (Steakumms)
1/2 tbsp Worcestershire Sauce
Drizzle a small amount of oil onto the potatoes and season with black pepper, onion powder, cajun seasoning, adobo, poultry seasoning, paprika, smoked paprika, cayenne pepper, chicken bouillon and combine.
When the pan becomes hot adjust the flame to medium-high heat.
Add a small drizzle of oil to the hot cast iron skillet.
Add seasoned potatoes.
Fry for about 6-8 minutes on each side.
Lower the flame to medium heat and adjust the flame as necessary.
Add and combine the garlic and bell peppers.
Add diced onions and additional seasoning if necessary.
Add about 5 tbs of water, stir and cover with a lid.
When the potatoes become softened.
Turn off the stovetop.
Add your favorite blend of cheese, parsley, and cover with a lid.
Using a separate pan.
Add a small drizzle of oil along with your bell peppers and onions.
Add the shaved steak and combine.
Allow the meat to cook thoroughly.
Season the steak with salt, black pepper and adobo, and Worcestershire sauce.
Set the meat and veggie mix to the side.
Add salt, and pepper, along with any preferred seasoning to your eggs and beat.
Using the same non-stick skillet.
Add a small drizzle of oil and non-stick cooking spray if necessary.
Add the eggs and allow the eggs to set for about 1-2 minutes.
Flip your eggs.
Add the steak and veggie mixture along with cheese to the omelette.
Serve with southwestern-style hash and favorite condiment.

INGREDIENTS
1 medium to large sweet potato cubed
1/4 red onion finely diced
1/4 yellow onion finely diced
1/8 orange & yellow pepper diced
Smoked Paprika
Salt & Pepper
Olive Oil * substitute butter, coconut oil, or cooking oil preference
INSTRUCTIONS
1. Cube sweet potato and toss w/ olive oil & smoked paprika
2. Finely dice red & yellow onions
3. Dice orange & yellow pepper
4. Saute onions & peppers in olive oil until translucent (toss w/ Salt & Pepper)
5. Set saute veggies to the side
6. Using the same skillet coat the bottom w/ Olive Oil and fry sweet potatoes
7. Cover for 15 - 20 minutes(until potatoes are tender but not mushy)
8. Add sauteed veggies to fried potatoes cook for 3 -5 minutes until mixed well
9. Serve hot

- 1 LB Russet Potatoes
- 1/2 Red Bell Pepper
- 1/2 Green Bell Pepper
- 1/2 Onion
- 1 Can, Corn
- 1 Can, Black Beans
- 0.5 Cup Sun Dried Tomato, Sliced
- 1 TBSP Chopped Garlic
- 1 TSP Smoked Paprika, Cumin, Chili Powder
- Salt & Pepper
- 2 TBSP Olive Oil

1. Start By Prepping The Vegetables. Chop Potatoes Into Bite Sized Pieces. Cut The Peppers And Onions Into Even Sized Pieces. Slice The Sun Dried Tomatoes And Chop The Garlic.
2. Heat Up A Large Cast Iron Skillet Over Medium High Heat. Once Nice And Hot, Cook Steak For 2 Minutes Without Moving, Flip, And Repeat. Remove The Steak From The Pan And Rest.
3. In The Same Pan, Lower The Hear TO Medium And Add Some Olive Oil. Throw In The Potatoes And Cook 15 Minutes, Mixing Often. After 15 Minutes, Add In Peppers And Onions. Cook For 2 Min.
4. Add In The Sun Dried Tomatoes And Garlic. Mix And Cook Until Fragrant.
5. Add In The Beans And Corn. Mix Everything Together And Add The Seasoning.
6. Cut Up Your Steak And Finish With A Sliced Avocado.
