How To make Spicy Chinese Sauce
1 tb Sichuan peppercorns, crushed
1 tb Minced fresh ginger
1 tb Minced garlic
6 tb Chinese black soy sauce
4 Scant tablespoons Chekiang
-vinegar or white rice -vinegar 4 1/2 ts Sugar
3 tb Sesame oil
1 ts Chili oil or cayenne pepper
-or Tabasco Mix all. Process just to blend, pour into a bowl and let stand until the sugar is completely dissolved. NOTE: The Chenkiang vinegar mentioned is somewhat similar to a thick malt type vinegar though it has more flavor. It has quite a unique and good taste. Any good Chinese market should have it. Spicy Sweet Sauce Ingredients:
• 1/2 cup – rice vinegar
• 3/4 cup – water
• Sugar substitute equal to 3/4 cup regular sugar
• 1 Tbs – minced garlic
• 1 Tbs – soy sauce
• 2 1/2 Tbs – sambal oelek
• 1/4 tsp – xanthan gum
Recipe makes about 1 1/2 cups (24 Tablespoons)

SPICY Asian dipping sauce | Super quick & simple
Super simple Spicy Asian dipping sauce. You can serve this sauce with steak, pork, seafood or anything of your choice.
Ingredients:
- 8-10 Thai chilis
- garlic
- 3-4 tbsp of fish sauce
- 3-4 tbsp of sugar
- lime
Throw the chili and garlic into a food processor and chop it up to desired consistency. Add fish sauce, sugar, and lime. Mix well and adjust to your liking. ENJOY!
Super Spicy Szechuan Chicken
Marinade Ingredients:
3 tsp of corn starch
1 tsp of salt
1 Tbsp. of rice wine
1/2 tsp of white pepper
1 Tbsp. of soy sauce
1 shredded scallion
2 slices of ginger
4 chicken thighs, chopped into bite-sized pieces
Other Ingredients:
vegetable oil for frying
2 Tbsp. of Szechuan peppercorn
5 dried red chilies, chopped
50 whole dried red chilies
4 slices of ginger
1 scallion, chopped
1/3 cup of peanuts
1/2 tsp of sugar
1/2 Tbsp. of rice wine
1 Tbsp of sesame oil
chopped scallions as garnish
Directions:
Combine marinade ingredients in a bowl, add the chopped chicken. Marinate for 10 minutes.
In about 1 1/2” of oil, fry the chicken until browned and crispy. Remove and set aside.
Heat oil in a wok or a large pan. Add the Szechuan peppercorn and dried red chilies. Fry until fragrant. Add the rest of the dried red chilies, ginger, scallion and peanuts. Fry for a minute. Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss to coat.
